RESTAURANT-STYLE SALSA

Steps:
- Combine the diced tomatoes, whole tomatoes, cilantro, onions, garlic, jalapeno, cumin, salt, sugar and lime juice in a blender or food processor. (This is a very large batch. I recommend using a 12-cup food processor, or you can process the ingredients in batches and then mix everything together in a large mixing bowl.)
- Pulse until you get the salsa to the consistency you'd like. I do about 10 to 15 pulses. Test seasonings with a tortilla chip and adjust as needed.
- Refrigerate the salsa for at least an hour before serving.
MEXICAN SALSA II
Plenty of cilantro and other fresh ingredients make this salsa a Mexican style favorite. Serve with corn chips, over eggs, or with any Mexican food.

- Place roma (plum) tomatoes and serrano peppers in a medium saucepan over medium high heat with enough water to cover. Bring to a boil. Boil 15 minutes. Remove from heat and drain.
- Place roma tomatoes, serrano peppers, onion, cilantro and garlic in a blender or food processor. Puree about 30 seconds, or to desired consistency. Transfer to a medium serving bowl, and salt to taste.

MEXICAN HOMEMADE SALSA

Steps:
- Heat a small ungreased cast-iron skillet over high heat. With a small sharp knife, pierce jalapenos; add to hot skillet. Cook for 15-20 minutes or until peppers are blistered and blackened, turning occasionally., Immediately place jalapenos in a small bowl; cover and let stand for 20 minutes. Peel off and discard charred skins. Remove stems and seeds., Place onion and garlic in a food processor; cover and pulse 4 times. Add the tomatoes, cilantro, salt and jalapenos. Cover and process until salsa reaches desired consistency. Chill until serving. Serve with chips.

SALSA DE CHILE PASILLA DE MICHOACAN
A delicious green sauce from Northern Michoacan. This is really good over boiled rice (morisqueta) or fried cheese (Minguichi). I have used this sauce on tacos and enchiladas with good results also. Yield varies depending on the size of your chiles and tomatillos. This recipe doubles easily and freezes well.

Steps:
- Heat oil in a heavy frying pan.
- Gently saute chiles, without burning, turning frequently until they are just firm to touch. About 5 minutes.
- Remove chiles with slotted spoon and place on paper towels to drain.
- In same pan, fry tomatillos and garlic until lightly browned and soft inside. About 5 minutes.
- Remove from pan and drain on paper towels. (Do not discard oil yet).
- Peel the garlic when cool enough to touch.
- Place water in blender jar. Add the tomatillos and peeled garlic.
- Crumble the fried pasilla chilles and add them all, with seeds and veins, to blender.
- Blend all for about 30 seconds to a puree texture.
- Heat oil in frying pan again.
- Add onion and saute gently until translucent but not browned. About 1 minute.
- Add chile mixture from blender and salt.
- Cook over medium high heat, stirring frequently (scraping bottom of pan as needed), until sauce has reduced a little. About 5 minutes.

MICHOACAN CHUNKY AVOCADO AND POTATO SALSA
I learned how to make this during my chef assistant days at Draeger's Cooking School. This is a very different salsa because it uses a potato. Please use waxy white potato, Yukon, or red potato for this dish.

Steps:
- In a saucepan bring a water to a boil and add the potato. Cook the potato for about 15 minutes or until just tender.
- Drain and dice the potato into 1/4-inch pieces. Place into a bowl.
- Cut the avocado in half lengthwise and remove the pit. Peel the skin and dice the avocado about 1/4-inch pieces. Add the avocado to the diced potato.
- Mix in the tomato, onion, chiles, cilantro, salt, pepper and lime juice and combine with avocado and potato mixture. Add more salt if needed and serve at room temperature.
