GUAMANIAN CHICKEN
When we were stationed on Guam, they used to make this wonderful chicken on huge grills, then chop it into smaller pieces and serve. The longer it stays in the marinade, the better.

Steps:
- Mix all ingredients but chicken.
- Place chicken into large zip loc bags and pour in half the marinade. (Save the rest of the marinade in the refrigerator for use when grilling.).
- Refrigerate over night or longer.
- Remove chicken, discarding the marinade.
- Grill until about half done.
- Dip each piece into the reserved marinade and finish cooking.
3 FINADENE SAUCES (GUAM)
Adapted from Barbecue USA. The soy and vinegar sauce is traditionally served with chicken and pork, the coconut sauce with seafood and poultry, and the lemon sauce with fish. Note on the yield: the coconut and lemon sauces each make 1 1/2 cups; the soy and vinegar makes 1 cup.

Steps:
- To make the soy and vinegar finadene: place the onion in a non-reactive bowl.
- Add remaining ingredients and stir to mix.
- This will keep, tightly covered, in the refrigerator for several days.
- To make the coconut finadene: Combine the coconut milk, garlic, ginger, and lemon juice in a non-reactive bowl and stir to mix.
- Add the onions, jalapenos, salt and pepper.
- This can be made several hours ahead.
- To make the lemon finadene: combine the lemon juice, salt and water in a non-reactive bowl.
- Whisk until the salt dissolves.
- Stir in remaining ingredients.
- This can be covered and refrigerated for several days.
MICRONESIAN FRIED RICE(GUAM)
This Guamanian fried rice get it's rich flavor from crispy chicken flavored tofu(the original recipe used chicken, I veganized it) and mushrooms, vegetables and lots of soy sauce. Simple and incredibly delicious! From the island of Guam in Micronesia.

Steps:
- If using the tofu, place cornstarch mixed with poultry seasoning in a shallow bowl(about 1/4 cup).Press tofu with a paper towel to remove moisture, then dredge in cornstarch to coat, shaking to remove excess.
- Heat skillet to medium high. Place oil in pan, then add the tofu pieces and saute till golden brown, about 10 minutes. Remove from pan.
- To the same pan add 1 teaspoons to 1 tbls. oil. Stir in mushrooms and saute till tender, about 8 minutes.
- Stir in the garlic and cook for 2 minutes.
- Add green onions, snow peas and carrots.
- Cook for 2 more minutes or until crisp-tender.
- Stir in the cooked rice.
- Add soy sauce.
- Cook and stir until the rice is heated thorough.
- Transfer into a serving dish.

INDONESIAN FRIED RICE (NASI GORENG)
Nasi Goreng, Indonesian fried rice. This dish can be enjoyed by itself or as the basis of a larger meal, for example with a rijsttafel. It is very easy to make and won't take more than 20 minutes to prepare.

Steps:
- Bring the rice and water to a boil in a saucepan over high heat. Reduce heat to medium-low, cover, and simmer until the rice is tender, and the liquid has been absorbed, 20 to 25 minutes. Spread onto a baking sheet, and refrigerate 2 hours until cold.
- Heat a large nonstick skillet over medium heat. Spray with nonstick cooking spray. Pour eggs into hot skillet. Cook until the eggs begin to set, lifting up the edges of the set eggs to allow the uncooked egg to contact the hot pan, about 1 minute. Flip omelet in one piece and cook until fully set, about 30 seconds. Slice omelet into 1/2 inch strips.
- Heat the vegetable oil in a wok or large frying pan over high heat. Stir in the onion, leek, garlic, and chile peppers. Cook, stirring, until onion is soft, 3 to 5 minutes. Stir in the chicken, prawns, coriander, and cumin, mixing well. Cook and stir for approximately 5 minutes.
- Mix in the cold rice, sweet soy sauce, and omelet strips; cook until shrimp are bright pink and chicken is no longer pink in the center, 3 to 5 minutes.
