BAKED ZITI CASSEROLE

Steps:
- Bring a large pot of lightly salted water to a boil. Cook ziti in boiling water until cooked through but firm to the bite, about 13 minutes; drain. Rinse ziti with cold water until cool; drain.
- Preheat oven to 375 degrees F (190 degrees C).
- Mix ziti, ricotta cheese, 1 1/2 cups tomato sauce, mozzarella cheese, egg, salt, and pepper in a large bowl.
- Spread 1/2 cup tomato sauce into the bottom of a 2 1/2-quart shallow baking dish. Pour ziti mixture into the dish. Top with remaining 1 1/2 cup tomato sauce and Parmesan cheese.
- Bake in preheated oven until sauce and cheese layer is bubbly and lightly browned, about 30 minutes. Let cool 10 minutes before serving.

- Cook pasta according to package directions. Drain pasta; set aside. In a small bowl, combine the egg, ricotta and 1/4 cup Parmesan cheese. , Spread 1 cup spaghetti sauce in a 13x9-in. baking dish coated with cooking spray. Top with a third of the pasta, half of the ricotta mixture, 2/3 cup mozzarella cheese, 1 tablespoon Parmesan cheese and 1 cup sauce. Repeat layers of pasta, ricotta mixture and mozzarella cheese. Sprinkle with 2 tablespoons Parmesan cheese. Top with remaining pasta, sauce mozzarella cheese and Parmesan cheese. , Cover and bake at 375° for 45-50 minutes or until heated through.

- Preheat oven to 375 degrees F (190 degrees C). Lightly grease a 9x13-inch baking dish.
- Fill a large pot with lightly salted water and bring to a boil. Stir in ziti pasta and return to a boil. Cook pasta, stirring occasionally, until cooked through but still firm to the bite, about 11 minutes; drain.
- Combine egg, ricotta cheese, and 1/4 cup Parmesan cheese in a bowl. Spread 1/3 the spaghetti sauce in prepared baking dish. Top with 1/2 the pasta, 1/2 the ricotta mixture, 1/3 the spaghetti sauce, 1/2 the mozzarella cheese, and 1/2 the Parmesan cheese; repeat layers. Top with remaining spaghetti sauce and Parmesan cheese; cover baking dish with aluminum foil.
- Bake in preheated oven until heated through, 45 to 50 minutes.

- There are a couple of ways to assemble the Casserole: One Way: Cook pasta, drain and put into large bowl. Mix with approximately 1 cup of sauce. Set aside. Mix ricotta cheese in a bowl with parsley and Romano or Parmesan grated cheese. Brown and drain ground beef and then add to the remaining first jar of sauce. Spread some sauce on bottom of pan. Add layer of pasta. Then add 6 large spoonfuls of ricotta mixture, sprinkle with mozzarella, and cover in a thin layer of sauce. Repeat layers of pasta, ricotta mixture, mozzarella and sauce. Last layer should be pasta and as much of the second jar of sauce to have a moist casserole. Bake in preheated 350-degree oven for 45min (or until lightly browned). Bring casserole hot to the Team Dinner. Another Way: Cook pasta, drain and put into a large bowl. Mix with the ricotta cheese, Romano or Parmesan cheese, mozzarella cheese, parsley, pepper, and 1-jar of sauce. Put mixture into a disposable aluminum pan. Add as much of the second jar of sauce to the top to ensure a moist casserole. Bake for 45min (or until lightly browned) in a preheated 350-degree oven. Bring casserole hot to the Team Dinner.

- To make sauce:.
- In a 6-quart pot, saute onion and garlic in liquid butter buds. Add undrained tomatoes, tomato paste, 1 1/2 cups water, 2 tablespoons parsley, sugar, oregano, basil and pepper. Mix well. Mash tomatoes. Simmer covered but stirring occasionally for 1 hour.
- Preheat oven to 350ºF. Cook ziti as package directs. Make cheese layer: In large bowl, combine ricotta, 1 cup mozzarella, 1/4 cup parmesan, egg beaters, parsley, and pepper. Beat with wooden spoon until blended.
- Spoon a little sauce into a 5-quart casserole dish (or 2 9-inch square dishes) that have been sprayed with cooking spray. Layer 1/3 ziti, cheese mixture, and remaining sauce. Sprinkle part of the remaining mozzarella on top. Repeat layers 2 times, ending with mozzarella and 1/4 cup parmesan. Bake uncovered 45 minutes.

- Preheat oven to 350 degrees.
- Spread 1 cup of pasta sauce in ungreased 9 x 13 inch pan.
- Arrange ½ of the frozen ravioli over pasta sauce, covering the bottom of the pan.
- Top with ½ of the remaining pasta sauce, 1 cup of cottage cheese, and 1 cup of mozzarella cheese. Repeat layers again starting with ravioli.
- Top with parmesan cheese. Bake for 30-40 minutes or until cheese begins to bubble.
- To make into a freezer meal, assemble casserole as directed above in freezable container. Secure with lid and freeze for up to 30 days. Thaw for one hour before baking. Bake at 350 degrees for 40-50 minutes, or until cheese begins to bubble.

- Bring a large pot of salted water to a boil. Cook the ziti according to the package directions for very al dente, about 7 minutes. (It will continue to cook in the oven so you want to undercook it just a bit.) Drain and add the pasta back to the pot. Set aside.
- Heat a large sauté pan (preferably nonstick) over medium-high heat. Crumble the sausage into the pan and cook, breaking apart with a wooden spoon, until lightly browned and just cooked through, 5 to 6 minutes. Use a slotted spoon to transfer the cooked sausage to a plate. Drain all but 1 tablespoon of the fat from the pan and set over low heat (if you don't have enough fat in the pan, add a tablespoon of olive oil). Add the garlic and cook, stirring constantly with a wooden spoon, until soft but not browned, about 1 minute. Add the crushed tomatoes, salt, sugar and red pepper flakes and simmer, uncovered, for 10 minutes.
- Add the heavy cream, 1/3 cup of the Pecorino Romano, cooked sausage, and basil to the pan; stir until evenly combined. Carefully pour the contents of the sauté pan into the large pot with the pasta and gently stir to combine. Spoon half of the mixture into a 9 x 13-inch baking dish. Sprinkle with half of the shredded mozzarella and half of the remaining Pecorino Romano. Spoon the remaining pasta mixture on top and sprinkle with the remaining mozzarella and Pecorino Romano. Transfer to the oven and bake, uncovered, until the cheese has melted and browned, 15 to 20 minutes. Sprinkle with more basil and serve.
