Snow peas need so little cooking, and I hate worrying about taking them off the stove in time when steaming, especially when I have guests over. I tried microwaving them tonight for the first time and think I'm on to something!

Microwave Snow Peas image

Steps:

  • Place snow peas in covered casserole, or other microwave-safe dish.
  • Add soy sauce and sesame oil and toss to cover.
  • Microwave covered for 3-4 minutes (or until snow peas are tender crisp). If cooking fewer servings, start with 2 minutes.
  • Stir and serve.

1 lb snow peas, ends snipped
1 tablespoon soy sauce
1 teaspoon sesame oil

Kung Pao Snow Peas image

Steps:

  • Heat a wok or large skillet over high heat and add the oil. Add the onions and stir-fry until just wilted, about 30 seconds. Add the snow peas and stir-fry until nearly crisp-tender, about 2 minutes more. Add the sauce and stir-fry to coat, about 1 minute.
  • Transfer to a platter or large bowl, sprinkle with the nuts and serve.

1 tablespoon peanut or grapeseed oil
1/2 large sweet onion, such as Vidalia or Maui, thickly sliced
8 ounces snow peas, ends trimmed (about 4 cups)
1/4 cup bottled all-natural kung pao, shiitake soy ginger or other low-sodium stir-fry sauce
2 tablespoons chopped unsalted roasted peanuts or cashews

We've lightened our version up by giving the chicken a quick marinade in soy and honey instead of coating and deep-frying it as most restaurants do. Sesame Chicken with Snow Peas image

Steps:

  • Whisk 3 tablespoons soy sauce, 2 teaspoons sesame oil and the honey together in a medium bowl. Add the chicken, toss and marinate 20 minutes.
  • Remove the chicken from the marinade using a slotted spoon. Heat 2 teaspoons canola oil in a nonstick skillet over medium-high heat. Cook the chicken in 2 batches, turning once or twice, until browned, 3 to 5 minutes (add 2 more teaspoons canola oil between batches). Transfer the chicken to a plate and wipe out the skillet.
  • Heat the remaining 2 teaspoons canola oil in the skillet. Add the scallions, reserving some of the green parts for topping. Add the ginger and garlic and cook, stirring, 1 minute. Whisk the broth, sugar, cornstarch, vinegar, chili paste and the remaining 2 tablespoons soy sauce in a bowl; add to the skillet and cook, stirring, until thickened, 3 to 4 minutes. Stir in the remaining 2 teaspoons sesame oil.
  • Meanwhile, cook the snow peas in a steamer basket set over a few inches of boiling water until crisp-tender, 2 to 3 minutes.
  • Return the chicken to the skillet with the sauce and heat through. Serve the chicken and snow peas over brown rice, if desired. Top with the sesame seeds and reserved scallion greens.

  • Put the oil in a 10- or 12-inch skillet, preferrably non-stick, over high heat. A minute later, add the ginger and peas and stir and toss occasionally, until they are lightly browned and their green color is vivid, about 2 minutes.

Quick Steamed Flounder With Ginger-Garlic Mustard Greens image

Steps:

  • Heat oils in a very large skillet. Add garlic and ginger and sauté until fragrant and translucent, about 2 minutes. Add mustard greens, soy sauce and 3 tablespoons water, and sauté until greens start to wilt, 2 minutes longer.
  • Spread greens out in pan. Season flounder with salt and pepper, and place on top of greens. Cover pan, reduce heat to medium, and let fish steam until just cooked through, about 6 minutes. If pan dries out before fish is cooked through, add a little more water, a teaspoon at a time.
  • Uncover pan and transfer fish to serving plates. If greens seem wet, turn heat to high to cook off excess moisture. Serve greens on top of fish, drizzled with a little more sesame oil and soy sauce, if desired.
