EASY MICROWAVE PEANUT BRITTLE
Super easy to make and tastes great. No need for a candy thermometer!

Steps:
- Spray a baking sheet and a wooden spoon with cooking spray.
- Mix sugar and corn syrup together in a microwaveable bowl safe for high temperatures.
- Heat sugar mixture in microwave on high for 5 minutes.
- Stir peanuts and butter into sugar mixture. Heat in microwave until mixture becomes a caramel color, 3 to 4 minutes.
- Mix baking soda and vanilla extract into syrup until smooth and foam has dissipated. Spread candy onto the prepared baking sheet using the sprayed wooden spoon. Work quickly; candy hardens fast. Let stand until cool. Break into pieces to serve.

MICROWAVE PEANUT BRITTLE
This puts store bought peanut brittle to shame. I prefer to use the skinless peanuts because I think the skins are bitter. The amount listed below for the peanuts is if you're using Virginia peanuts. If you're using Spanish peanuts then reduce the amount of peanuts to 1 1/2 cups. Be sure to watch the candy carefully the first time you make it.

- Combine peanuts, sugar, corn syrup, and brown sugar in a large microwave safe bowl. Mixture will be quite gummy.
- Microwave on high power for 2 minutes and then stir.
- Continue microwaving the peanut brittle a couple minutes at a time until the peanuts are a nice roasted brown color. Be sure you're looking at the peanuts themselves and not the syrup surrounding them. The time this takes will vary according to your microwave. When the syrup starts to get really hot you may want to check every minute or less to prevent it from burning.
- After the peanuts are cooked quickly stir in the butter, vanilla, and baking soda.
- Pour the candy out on to a sheet of aluminum foil and spread it as thin as you can get it.
- Let the candy cool completely before breaking it into pieces.

BEST EVER MICROWAVE PEANUT BRITTLE
Note your microwave needs to be 750 to 950 watt. If your microwave is higher need to lower your cooking times and if your microwave is less you will need to increase your cooking time. I'm sorry I did not update this sooner.

- Store in air tight container.

Steps:
- Remember all microwaves vary so you may need to adjust your time by 15 seconds. If the first batch comes out to soft then you know you didnt cook it long enough. After you make the first batch it gets really easy and fast to make.
- In a large microwave safe bowl stir peanuts, sugar, syrup and salt together. Be sure to mix them well. (rubber spatula works really well).
- Microwave for 3 minutes 45 seconds to 4 minutes.
- Stir with a metal spoon so it doesnt stick. Stir it quickly so it doesnt have time to cool.
- Microwave 3 1/2 to 4 more minutes.
- Stir in butter.
- Microwave 2 more minutes.
- Stir in vanilla and dont panic when it steams and turns brown.that is what you want.
- Add baking soda and stir quickly until is gets light and foamy.
- Immediately pour onto a lightly buttered baking sheet and spread to about 1/4 inch thick.
- Cool.
- break into pieces and store in an airtight container.

Steps:
- 1. If you don't have a silicone baking sheet (I love mine!), butter (or use cooking spray to coat) a cookie sheet. Set aside.
- 2. In a 1-1/2 quart microwave-safe casserole, stir together the sugar and syrup. Microwave on HIGH for 4 minutes
- 3. Stir in the peanuts, then microwave on HIGH for 2 1/2 to 4 minutes. WATCH TO KEEP FROM OVER-BROWNING! When it starts to brown, take it out of the microwave immediately!
- 4. Add the margarine and vanilla. Microwave on HIGH for 30 seconds.
- 5. Add the baking soda. Stir until light and foamy. Quickly spread THIN on the prepared cookie sheet. Cool 30-60 minutes.
- 6. Break into pieces and store airtight. Makes one pound of peanut brittle.
- 7. Peanut brittle also makes a great gift!

- Butter a cookie sheet. Combine sugar and corn syrup in a 2 quart glass bowl and microwave on high 4 minutes. Stir in peanuts and microwave on high 3 1/2 minutes more, then stir in butter and vanilla and microwave for 1 1/2 minutes.
- Stir in baking soda until light and foamy. Pour onto cookie sheet and spread thin. Cool completely and break into pieces and serve.
