MARSHMALLOW POPCORN BALLS
These are very easy popcorn balls to make. The marshmallows make them similar to crispy rice cereal bars that are so popular. Made with marshmallows, these are sweet, crispy, and chewy. Everyone's favorite combination!

Steps:
- Pour kernels into a small paper bag (standard lunch size is fine) and fold the top of the bag over twice to close (each fold should be 1/2 inch deep; remember the kernals need room to pop).
- Seal the bag with 2 staples placed 2 to 3 inches apart. (Editor's Note: Using metal staples in a microwave can be hazardous, please consider an alternate method).
- Place bag in microwave on carousel. Cook on high 2-3 minutes, or until the pops are 5 seconds apart. Pour in melted butter and salt and shake the bag to distribute.

- Bring the butter, sugar, and corn syrup to a boil. Turn down the heat and let simmer for 3 minutes, stirring occasionally. Do NOT overcook or it will be hard instead of gooey and soft. Add vanilla. (Careful, it bubbles up.) Pour syrup over popcorn/marshmallow mixture and stir well to coat.
- Best served warm, but will stay soft even when cooled down. Keep leftovers covered in an airtight container or in gallon size zip-top plastic bags up to 5 days.
