SPLIT-SECOND SHRIMP

I use my microwave to hurry along the prep of this super fast shrimp scampi. It's deliciously buttery and full of garlic flavor. We love it as a main dish, but it makes an excellent appetizer, too. - Jalayne Luckett, Marion, Illinois

Steps:

  • Place butter, garlic and cayenne in a 9-in. microwave-safe pie plate. Microwave, covered, on high until butter is melted, about 1 minute. Stir in wine, lemon juice, parsley and salt. Add shrimp; toss to coat. , Microwave, covered, on high until shrimp turns pink, 2-1/2-3-1/2 minutes. Stir before serving.

Steps:

  • In a microwave safe 2-quart casserole, place in butter and cook until melted.
  • Remove and stir in parsley flakes, lemon juice, garlic and salt.
  • Add shrimp; toss to coat.
  • Cover and microwave on hight for 3 - 5 minutes.
  • Cooking time will vary with the size of the shrimp. When cooked, shrimp will be pink.
  • Serve over hot cooked rice and sprinkle with paprika.

Microwave Shrimp in Garlic Butter image

Steps:

  • Microwave butter 30 to 45 seconds on high until melted.
  • Add garlic powder and parsley flakes.
  • Separate shrimp: Place in a glass pie dish.
  • Pour butter mixture over shrimp. Cover tightly with plastic.
  • Microwave 5 to 8 minutes, until shrimp are opaque. Stir every 2 minutes.
  • Let stand covered 1 1/2 to 2 minutes.
  • Serve with rice or pasta.

Steps:

  • Bring a large pot of salted water to a boil. Stir in pasta and return pot to boil. Cook until al dente. Drain well.
  • Melt butter in a large saucepan over medium heat. Stir in garlic and shrimp. Cook, stirring constantly, for 3 to 5 minutes.
  • Stir in wine and pepper. Bring to a boil and cook for 30 seconds while stirring constantly.

  • In a large stock pot, bring salted water to a boil. Once boiling, add fettuccine and cook just under al dente, about two minutes less than the package directions. Reserve approximately 1/2 cup pasta water before draining.
  • Meanwhile, in a large skillet over medium heat, add 2 T butter and 1 1/2 T olive oil until hot. Add shallot, garlic cloves, red pepper flakes, and a pinch of salt. Cook for 1-2 minutes. Add the seasoned shrimp to the skillet, spread evenly on their side. Cook on one side for 1-2 minutes until begining to turn pink. Once cooked on their one side, remove from skillet and set aside.
  • Add wine to the shallot mixture to slowly to deglaze pan. Add additional salt (~ 1/4 tsp) and lemon juice. Bring sauce to a simmer for approximately 2-3 minutes to reduce the wine down. Add an additional 1/2 T butter. Place the shrimp back in the skillet and cook on second side. Add cooked pasta and stir to coat, adding any pasta water as needed for sauce to reach desired consistency (I like to add a couple tablespoons). Cook pasta in sauce for 1-2 minutes.
