Steps:

  • 1. Dredge steak in mixture of flour, salt and pepper. Put into large casserole dish with lid and sprinkle any remaining flour over the meat. Add all the remaining ingredients.
  • 2. Bake covered at 325° for 2 1/2 to 3 hours. Serve over noodles or rice.
  • 3. NOTE: I usually serve this with noodles and add the cooked noodles to the meat mixture to soak up all the juices.

1 1/2 lb round steak, cut into strips
1/4 c flour
1 tsp salt
1/4 tsp pepper
1 Tbsp molasses or brown sugar
3 Tbsp soy sauce
1 c beef broth
16 oz can stewed tomatoes
1 large onion, sliced
1 green pepper, sliced
1/4 lb fresh mushrooms, slices (optional)

EMILY'S MARINATED VENISON STEAKS

I threw this together one afternoon, as we needed to use up the venison we had in our freezer. We don't like the 'gamey' taste of some meats, and this marinade did the trick! I find it best to have the meat marinate overnight so it really takes in the flavors.

Emily's Marinated Venison Steaks image

Steps:

  • Whisk Worcestershire sauce, soy sauce, lime juice, onion, red pepper flakes, dry mustard, salt, thyme, black pepper, garlic, and hot pepper sauce together in a bowl; pour into a resealable plastic bag. Add venison steaks, coat with the marinade, squeeze to remove excess air, and seal the bag. Marinate in the refrigerator at least 1 hour.
  • Preheat an outdoor grill for medium-high heat and lightly oil the grate.
  • Remove venison from the marinade and shake off excess. Discard remaining marinade.
  • Cook the steaks until they are firm, hot in the center, and just turning from pink to grey, about 5 minutes per side. An instant-read thermometer inserted into the center should read 150 degrees F (65 degrees C).

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large skillet over medium heat, briefly brown the cube steaks.
  • Arrange meat in a single layer in a 13x9 inch baking dish and pour the soup over the top. Bake in preheated oven for 1 hour.

Coal miners in the Midwest would take these for their lunch. They keep warm rather long wrapped in a towel. Some housewives would stuff one end with a savory filling, and the other with a sweet one. Steps:

  • Place the flour, 2 teaspoons of salt, and the lard in a bowl. Quickly rub the lard into the flour with your fingertips until it resembles small peas. Pour in the ice water, and form into a ball. Add more water if it feels too dry. Divide the dough into 6 balls, and wrap in plastic. Chill one hour.
  • In a bowl, combine the meat, turnips, potatoes, onions, remaining 1 tablespoon salt, and pepper.
  • Preheat the oven to 400 degrees F (205 degrees C).
  • Roll out one of the balls on a floured surface to about 1/4 inch thick. Using a cake pan, trace a 9 inch circle in the dough; cut out the circle. Place about 1 1/2 cups of the meat mixture into the middle of the circle. Fold the edges of the circle up to meet along the top of the meat filling, and crimp the dough along the top to seal. Repeat until all dough is used up. With a spatula, transfer the pasties to an ungreased sheet.
  • Bake the pasties for 45 minutes, or until golden. Serve hot or at room temperature.

DEER STEAK (MINUTE STEAKS)

This is how everyone I know cooks deer steak. We usually run the pieces through a tenderizer 2 or 3 times when we process our deer. These pieces are usually made with the tenderloin or back straps. They come out looking just like minute steaks which is why I call it deer steak. This is super easy to make and the meat is fork tender. This recipe can very easily be made in a crock pot as well. Very good served with mashed potatoes because the mushroom soup makes the gravy. If you want to spice this recipe up you can add spices to the flour mixture.

Deer Steak (Minute Steaks) image

Steps:

  • Pre heat oven to 300 degrees and heat oil in a pan. Mix the flour, salt and pepper together. Dredge steaks in flour mixture. Brown the outside of the steaks in oil. They do not need to be cooked all the way through. Put steaks in a 9X13 pan and pour in mushroom soup and milk. You can mix the mushroom soup and milk together before if you want. Make sure that the steaks are covered with milk and mushroom soup. Cook the steaks for at least three hours. If you don't want to heat up your oven for this long just cook these in a slow cooker. Serve these with mashed potatoes.
