MINI KEY LIME PIES

Nothing taste better than key lime pie made with fresh key limes. This one is really tasty and super simple to make. Mini pies are great because everyone can have their own.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Place mini graham cracker crusts onto a baking sheet.
  • In a bowl, whisk together the sweetened condensed milk, sour cream, Key lime juice, and Key lime zest until smooth. Pour the filling into the graham cracker crusts, filling to the top.
  • Bake in the preheated oven until hot, 5 to 8 minutes. Refrigerate until thoroughly chilled, at least 1 hour. To serve, garnish each mini pie with a Key lime slice and a dollop of whipped cream topping.

12 mini graham cracker crusts
3 cups sweetened condensed milk
1 cup sour cream
1 cup freshly squeezed Key lime juice
3 tablespoons grated Key lime zest

Steps:

  • Preheat oven to 350. Line muffin pan with 18 liners.
  • Mix cracker crumbs, melted butter and sugar until combined. Divide crumbs among 18 liners and press down compactly. Bake for 5 minutes and remove from oven.
  • Beat cream cheese on hi until smooth for about one minute, beat in egg yolks on med hi, scraping down sides as needed; then on hi add in condensed milk, lime juice until combined. Stir in zest.
  • Divide filling among crusts. Bale 12-13 minutes. Remove from oven.
  • Turn oven to 450.
  • Whisk sour cream, sugar, salt for topping together and spread over pies.
  • Bake pies for 5 minutes. Topping will be loose, but will set up as pies chill.
  • Remove from oven and cook in pan at room temperature on rack. When cooled put pies in refrigerator for at least two hours and up to one day.
  • Before serving, garnish with zest if desired.
  • Serve chilled. PIes can be frozen. Thaw overnight in refrigerator before serving.

Steps:

  • Preheat the oven to 325°F (170°C).
  • Make the filling: Whisk the egg yolks and lime zest in a medium bowl until tinted light green, about 2 minutes.
  • Beat in the lime juice and condensed milk, then set aside at room temperature to thicken.
  • Make the crust: Crush the graham crackers in a zip-top bag, then mix in the sugar and butter. Divide the crumbs between a 6-cup muffin tin and press down to form crusts.
  • Bake for 8 minutes or until golden brown. Let cool for 15 minutes.
  • Pour filling into the crusts, then bake until the center is slightly jiggly, 15-17 minutes.
  • Let cool to room temperature, then cover and refrigerate until chilled, 2-3 hours.
  • Make the whipped cream: In a large bowl, beat the heavy cream with an electric hand mixer and slowly add the sugar. Once soft peaks form, add the lime zest, then whip until firm peaks form.
  • Top the mini pies with whipped cream.
  • Enjoy!

  • Heat oven to 325 degrees F. Combine graham cracker crumbs and sugar. Add melted butter and stir until evenly moistened. Press mixture into bottom and sides of a 9-inch pie plate to form crust. Bake 10 minutes or until crust begins to brown. Cool 15 minutes on wire rack.

  • In a large bowl combine the sweetened condensed milk, sour cream, key lime juice, and lime zest. Using a hand mixer, beat until thoroughly combined. About 1 minute. If you don’t have a hand mixer you can use a whisk and just whisk vigorously. Pour the mixture into the graham cracker crust.
  • Bake for 10 minutes. Tiny pinhole bubbles will begin to burst on the surface of the pie (hard to see so watch closely). Do not brown the pie.
  • Remove the pie and let sit at room temperature until warm. Then chill thoroughly before serving.

  • If you are using whole graham crackers, break them into small pieces and place them in the bowl of a food processor fitted with the blade attachment. Pulse until crackers are broken into crumbs. Add sugar and butter and pulse again until well mixed. If you are using store bought crumbs, just mix all the ingredients together in a bowl.
