- To make the sauce: Melt the butter in a heavy medium saucepan over medium-low heat. Add the flour and whisk for 3 minutes. Whisk in the milk. Increase the heat to medium-high. Whisk the sauce until it comes to a simmer and is thick and smooth, about 3 minutes. Whisk the salt, pepper, and nutmeg into the bechamel sauce.
- Preheat the oven to 450 degrees F.
- Whisk the ricotta, spinach, 1 cup Parmesan, prosciutto, egg, salt, and pepper in a medium bowl to blend.
- Add a tablespoon or 2 of oil to a large pot of boiling salted water. Boil the noodles until just tender but still firm to bite. Drain. Arrange the noodles in a single layer on a baking sheet to prevent them from sticking.
- Butter a 13-by-9-by-2-inch glass baking dish. Pour the bechamel sauce over the bottom of the prepared dish. Lay out 4 lasagna noodles on a work surface, then spread a large spoonful (about 3 tablespoons worth) of ricotta mixture evenly over each noodle. Starting at 1 end, roll each noodle like a jelly roll. Lay the lasagna rolls seam side down, without touching, atop the bechamel sauce in the dish. Repeat with the remaining noodles and ricotta mixture. Spoon 1 cup of marinara sauce over the lasagna rolls. Sprinkle the mozzarella and remaining 2 tablespoons of Parmesan over the lasagna rolls. Cover tightly with foil. Bake until heated through and the sauce bubbles, about 20 minutes. Uncover and bake until the cheese on top becomes golden, about 15 minutes longer. Let stand for 10 minutes. Meanwhile, heat the remaining marinara sauce in a heavy small saucepan over medium heat until hot, and serve alongside.
SUNNY'S EASY TOMATO AND BASIL LASAGNA ROLL-UPS

- Steam your noodles: Place noodles in a metal baking pan with sides, making sure to spread out. Pour steaming-hot salted water over the top, moving noodles around a bit to be sure the water gets between them. Cover tightly with aluminum foil and let rest for 20 to 25 minutes. When ready to assemble, remove one at a time as you go and pat dry.
- Make the filling: Add the ricotta, cheese blend, basil, parsley, red chile flakes, egg, lemon zest, a pinch of salt and a few hefty grinds of black pepper to a large bowl. Stir to combine.
- Assemble: Preheat the oven to 375 degrees F.
- Add half the tomato sauce to a 9-by-13-inch baking dish and spread or tilt to even it out. Take one lasagna noodle and lay flat on the counter, then add a scoop of filling to the center and spread it along the length. Roll up the noodle and place it standing on end in the dish, nestling the rolls together as you go to hold the seams secure. Repeat with the rest of the noodles until the dish is full. Pour over remaining tomato sauce and spread to even out. Cover dish with aluminum foil.
- Bake until sides are bubbly and a few edges are golden, about 20 minutes. Uncover and cook until edges begin to brown, another 5 to 10 minutes. Garnish with Parmesan and more herbs.
MAKE-AHEAD LASAGNA ROLL-UPS RECIPE BY TASTY

- Cook lasagna noodles al dente.
- In a skillet over medium heat, cook beef, sausage, onion, salt, and pepper until fully cooked.
- Add spinach and 1 cup of marinara sauce, and let simmer. Remove from heat.
- In a bowl, combine ricotta, Italian seasoning, and egg.
- Spread mixture over each lasagna noodle, then top with meat mixture. Roll up tightly and place in a disposable casserole dish.
- Let cool completely, then freeze up to 4 days.
- To bake, let thaw in the refrigerator during the day.
- Preheat oven to 350°F (180°C).
- Top with remaining 2 cups of marinara, cover tightly, and bake for 40 minutes.
- Uncover, and top with mozzarella and parmesan. Broil an additional 5 minutes or until cheese is melted to your preference.

- In a skillet, cook beef, onion and garlic until meat is no longer pink; drain. Add tomatoes, salt, oregano and cayenne; simmer for 10 minutes. , Spoon half of the meat sauce into a greased 9-in. square baking dish. - Cook and stir ground beef, onion, garlic powder, and oregano in a large skillet over medium heat until onion is tender and beef is browned, about 10 minutes. Add tomato sauce and sugar; simmer until sauce is heated through, about 10 minutes.
- Bring a large pot of lightly salted water to a boil. Cook lasagna in the boiling water, stirring occasionally until cooked through but firm to the bite, 8 to 10 minutes. Drain.
- Preheat oven to 375 degrees F (190 degrees C). Grease a 9x13-inch casserole dish.
- Mix ricotta cheese, egg, parsley, and 3/4 cup Parmesan cheese together in a bowl.

- Pasta Sauce:.
- Brown beef and pork in a frying pan until thoroughly cooked, and drain excess fat from pan.
- Finely dice both the garlic and onions and add them to your meat medley.
- Cook until both the onions and garlic are translucent.
- Add pasta sauce and turn to low to simmer.
- Chop up your fresh herbs and add it to your sauce. Remember to remove them from their stems! Keep the sauce low and simmer while you cook the rest of your lasagna ingredients to help thicken your sauce.
- Add salt, pepper and any other spices you fancy.
- Noodles:.
- Lasagna noodles require very little time to cook. Some recipes suggest that you don't use boiling water, but instead use hot water from the tap and soak the noodles in it.
- This is a good suggestion for parboiled noodles, but if you have complete raw noodles, you will want to boil some water in a big pot and cook the noodles for 10 minutes.
- When done, strain them and run them under cool water. Note: Noodles should not be over cooked, it will turn them weak and flimsy, and that's no good! Try to get them El Dante.
- Ricotta Mixture:.
- Wash and separate the broccoli head as well as peel the carrots. Then use a cheese grader to shred both the carrot and broccoli into a fine mixture.
- Add all your ricotta cheese to this and mix thoroughly. Add salt and pepper to taste.
- Preparation:.
- Preheat the oven to 400°F.
- Layout your cook noodles and cut them in half on a cutting board. With a spoon, scoop out a small bit of your ricotta mixture onto your ½ noodle.
- Use the back of the spoon to distribute the mixture. Next, add a spoon full of the meat sauce.
- When both mixtures are equally distributed along the noodle, take one end and begin to roll it between your thumbs and index fingers. Do this for all your noodles until you've exhausted your supplies.
- Place all your lasagna roll-ups onto a baking sheet. Use any excess sauce to blanket the rolls.
- Afterwards, liberally spread your mozzarella cheese over top.
- Place in the oven and cook for 15 - 20 minutes.
- Let it cool for 5 minutes before serving.

- Cook the lasagna noodles in a large pot of salted boiling water until al dente. Drain, rinse with cold water to cool and lay flat on a sheet of foil. Set aside.
- Make the sauce: In a large pot, heat the olive oil over medium-high heat. Add the onion, mushrooms, green pepper and garlic and saute 4 to 5 minutes, until the vegetables are starting to soften. Remove the veggie mixture from the pan, then add the ground beef to the pan and cook, stirring occasionally, until it's totally browned. Drain the excess fat, then add 1/2 teaspoon each salt and pepper, the diced tomatoes, tomato paste, the veggie mixture and 1 tablespoon each parsley and basil and stir to combine. Let the mixture simmer over low heat, 30 minutes.
- Make the filling: Combine the ricotta, 1/2 cup mozzarella, 3/4 cup parmesan, the eggs, 1/2 teaspoon each salt and pepper and the remaining 3 tablespoons each parsley and basil. Stir to combine.
- Assemble the lasagna: Spoon a thin layer of sauce onto the bottom of a 9-by-13-inch pan or five 6-inch disposable foil loaf pans. Spread 2 to 3 tablespoons ricotta filling on each lasagna noodle, then roll them up so that the cheese is on the inside of the roll. Lay them sideways in the pan(s). (Four roll-ups will fit in each loaf pan, or you can fill a 9-by-13-inch pan.) Top with the remaining sauce and plenty of grated mozzarella and parmesan.
- If you're making the roll-ups right away, place the pan(s) on a baking sheet and bake at 375 degrees F for 20 minutes, until hot and bubbly.

- In a large bowl, stir together: ricotta, 1 egg, 1/4 cup parmesan cheese, 1 1/2 cups mozzarella cheese and 1/4 cup parsley.
- To contain messiness, arrange noodles over a large baking sheet in a single layer. Spread 1/4 cup (1 scant ice cream scoop) of cheese mixture over the top of each noodle. Add a heaping Tbsp of meat sauce in a strip down the center of the noodle. Roll noodles up and arrange in the prepared casserole dish.
