MOMMA'S MMM-MMM-MAGNIFICENT MEATLOAF
I've never been a big meatloaf fan but I like this recipe. My family raves about it! I think the onion, mushroom, cheese and bacon combination really makes it stand out from your ordinary meatloaf!

Steps:
- Preheat an oven to 375 degrees F (190 degrees C).
- Mix the ground beef, sausage, mushrooms, onion, barbecue sauce, Worcestershire sauce, egg, oatmeal, garlic powder, pepper, and Cheddar cheese together in a large bowl until evenly mixed. Form into a loaf and place in a 9x13-inch baking dish. Lie the bacon strips across the top of the meatloaf.
- Bake in the preheated oven until no longer pink in the center, about 1 hour. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).

MARY'S MMMMM MEATLOAF
The sweetness of the sauce makes this recipe really special. I prepared it without the optional green chilies and jalapenos, but may give that a try next time!

Steps:
- 1. Beat egg and blend in the tomato sauce and garlic salt. Add cheese, chopped onion, bell pepper, RITZ crackers, and ground beef. Thoroughly squish together with hands (yes, it is messy) If you don't want to get your hands messy, do as my friend did - put it all in a food processor and mix.
- 2. Spread in a 1 1/2 quart baking dish.
- 3. Bake in preheated 350 degree oven for 50 minutes.
- 4. Remove and drain off fat. Poke holes in the top and pour glaze on top.
- 5. Return to oven and bake 10 minutes.
MMMM MMMM MEATLOAF
This Meatloaf recipe was something I sort of adapted from combining a lot of different Meatloaf recipes. I've been told it "rivals the best meatloaf I've ever made" by my godmother, who is hands down the best chef I've ever met. I was glowing for a week! And it's EASY!

Steps:
- Preheat oven to 375°F.
- Beat 2 eggs, milk and water in medium bowl. Add stuffing mix and seasoning packet and stir to coat. Gently mix in ground beef until stuffing generally well mixed.
- Shape mass into "loaf" on "sided" cookie sheet. Bake for approx 1 hr or until internal temp reaches 160° w/thermometer.
- *Note: Depending on the fat content of the ground beef you go with you may consider using a higher sided baking pan. The lower fat ground beef doesn't create as much run off but are generally come out a lot dryer when cooked. The higher fat ones can cause overflow on a regular cookie sheet. I generally stick to 80/20 because it is the right balance for us.
