MULTIGRAIN SEEDED BREAD

Sunflower seeds, sesame seeds, and pumpkin seeds are incorporated into the dough of this whole wheat bread and liberally sprinkled onto the crust, giving this bread a well rounded flavor and lots of texture. This recipe is from The WEBB Cooks, articles and recipes by Robin Webb, courtesy of the American Diabetes Association.

Multigrain Seeded Bread image

Steps:

  • In a large bowl, combine the whole wheat flour, all-purpose flour, yeast, and salt. In another bowl, mix the seeds with the oats.
  • In a saucepan, combine the water and molasses and warm the mixture over low heat until a thermometer reads 120 to 130 degrees F (50 to 55 degrees C) .
  • Add the liquid to the flour mixture with the egg white. Mix together until a soft dough forms.
  • Turn the dough onto a lightly floured surface. Knead for 10 minutes; then shape into a ball. Lightly oil a large stainless steel bowl. Add the dough and turn to cover the dough with the oil. Cover the bowl with a tea towel and let rise in a warm place for 2 hours until doubled in size.
  • When the dough has risen, punch the dough down with your fists and add all but 2 Tablespoons of the seed mixture working it into the dough. Reserve the 2 Tablespoons of seed mixture for the topping. Shape the dough into a loaf by rolling it into a 12 x 8 inch rectangle and then roll up by its shortest end. Pinch the ends together and tuck underneath. Place in a non-stick 9x5 inch loaf pan with the seam underneath. Cover the loaf pan with a tea towel and let rise for 1 hour until doubled in bulk.
  • Preheat the oven to 350 degrees F (175 degrees C). Brush the top of the loaf with milk and sprinkle on the reserved seed mixture. Bake the bread for 30 minutes or until the loaf sounds hollow when tapped on the bottom. Remove the bread from the pan and let cool completely.

OLD FASHION MOLASSES BREAD

Old fashioned New England flavor using a bread machine! You can mix the bread in the machine then bake it in the regular oven using your favorite pans, I do.

Old Fashion Molasses Bread image

Steps:

  • Place ingredients in the bread machine pan in the order suggested by the manufacturer. Select Dough or White Bread setting, and then Start.
  • If the dough does not form a ball on the paddle, add 1 tablespoon of flour at a time until the ball forms. Allow machine to complete selected cycle.
  • To bake conventionally, remove the dough from the bread machine pan after the Dough cycle has completed. Shape into a loaf, and place in a greased 9 x 5 inch loaf pan. Let rise until doubled. Bake at 350 degrees F (175 degrees C) for about 40 minutes.

MOLASSES SEED BREAD

I created this after a friend mentioned enjoying a bread with molasses and sunflower seeds. I absolutely love this subtly sweet and salty/nutty bread and it's become one of my favorite sandwich breads.

Molasses Seed Bread image

Steps:

  • Dissolve yeast and sugar in warm water. Let sit until frothy ~10 minutes.
  • Add oil, molasses, and whole wheat flour and mix until full incorporated.
  • Slowly add all-purpose flour, 1/2 cup at a time, and salt. I usually use about 1.75 cups of the AP flour.
  • Add in seeds.
  • Knead in a mixer about 10 minutes, or longer if you're kneading by hand.
  • Place into a greased bowl and let rise until double, about 1.5 hours.
  • Deflate the dough and let rise again until double, about 50 minutes.
  • Deflate dough and flatten with a rolling pin into a long rectangle, about 8 inches wide.
  • Slowly roll the dough into an 8″ wide log, squeezing out all the excess air as you go.
  • Pinch seams together and place seam side down into a 8x4" loaf pan.
  • Let rise about 30 minutes in loaf pan and preheat oven to 350.
  • Bake about 35-40 minutes.

  • In a large bowl, pour boiling water over cereal. Add the molasses, sugar, oil and salt. Let stand until mixture cools to 110°-115°, stirring occasionally. Stir in yeast. Add 8 cups flour. Beat until smooth. Add enough remaining flour to form a soft dough., Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1-1/2 hours., Punch dough down and divide into thirds; shape into loaves. Place in three greased 9x5-in. loaf pans. Cover and let rise until doubled, about 1 hour. , Bake at 350° for 45-50 minutes or until golden brown. Remove from pans to wire racks to cool.

FLAXSEED MOLASSES BREAD

This was adapted from a Hodgson Mill recipe for the breadmaker. I adapted it to traditional baking method and subbed some whole grain flour to make it healthier. The result was a sweet, fragrant, chewy and healthy bread that is fabulous with honey butter spread on top! I recommend Karen From Colorado's Recipe #17086. Enjoy!

Flaxseed Molasses Bread image

Steps:

  • Add dry ingredients to stand mixer.
  • Add liquid ingredients.
  • Mix at second speed 7 minutes.
  • Let rise covered until doubled (about 90 minutes).
  • Form log, let rise in bread pan to 1 1/4 inches high in center.
  • Bake at 350 degrees to internal temp of 190 degrees.

7/8 cup water
2 tablespoons butter

1 teaspoon salt

  • Heat oven to 325 degrees. Grease an 8-by-4-inch or 9-by 5-inch loaf pan (Bittman recommends a non-stick loaf pan but I prefer my stoneware loaf pan).
  • If using buttermilk or yogurt, ignore this step. Make soured milk: gently warm the milk gently (1 minute in the microwave will suffice) and add vinegar. Set the soured milk aside.
  • Mix together the dry ingredients. Stir molasses (or honey or maple syrup) into the soured milk, buttermilk or yogurt. Pour the liquid ingredients into the dry ingredients and stir with a big spoon, just until combined. Pour the batter into a greased loaf pan.
  • Bake until firm and a toothpick inserted into center comes out clean, 45 minutes to 1 hour. Allow the bread to cool in the loaf pan for 15 minutes, then carefully invert the bread onto a wire rack.
