Steps:
- Cook the potatoes in boiling water until tender. Then process them using a ricer or food mill OR mash them with a fork for a more lumpy texture.
- Add the flour, egg, some seasoned salt and pepper and combine.
- Form into balls, and then slightly flatten into discs. Let them cool completely.
- Heat some canola oil in a cast-iron skillet and fry the cooled tots until golden. Drain on a paper towel.
- You can freeze the tots after frying. Remove from the freezer when you need them and reheat in a 400 degree F oven for 10 to 12 minutes.
SWEET PO-TATER TOTS

- Bring a medium pot of water to a boil and add the sweet potatoes. Cook for 5 minutes, drain and rinse with cold water to cool. Dry off any excess water with a kitchen towel.
- Put the onions and cooled sweet potatoes in the work bowl of a food processor fitted with the metal chopping blade. Pulse until the sweet potatoes are almost pureed but still a bit grainy. You should have some very small bits of potato visible. Transfer the mixture to a large bowl and stir in the flour, 1/2 teaspoon salt and 1/4 teaspoon pepper to combine.
- Using your hands, shape the potato mixture into 1- to 1 1/2-inch-long cylinders, packing them very tightly.
- Heat about 2 inches of oil in a deep heavy skillet over medium-high heat until a deep-frying thermometer inserted in the oil registers 350 degrees F. Line a large plate or baking sheet with paper towels.
- Working in batches, add the tater tots to the shimmering hot oil and cook until golden brown, 3 to 5 minutes, turning with tongs or a slotted spoon to ensure even browning and being careful not to overcrowd the pan. With a slotted spoon or skimmer, remove the browned tots to the towel-lined plate to drain. Serve warm.
SWEET POTATER TOTS

- Preheat the oven to 400 degrees F. Bake the sweet potatoes directly on the oven rack until tender, about 50 minutes. Let cool completely.
- Coat a baking sheet with cooking spray. Peel the sweet potatoes, transfer to a large bowl and mash. Stir in 1 1/2 cups crushed chips, the onion, butter and egg. Add 1/2 teaspoon salt, and pepper to taste; stir until combined.
- Spread the remaining 2 1/2 cups crushed chips in a shallow dish. Scoop about 1 tablespoon of the sweet potato mixture into your hands and shape into a small 1-inch-long cylinder. Repeat to make about 36 cylinders. Roll in the crushed chips to coat on all sides and arrange on the prepared baking sheet; spray with cooking spray. Bake, rotating the pan halfway through, until crisp and golden, about 30 minutes. Season with salt.
- Meanwhile, mix the mayonnaise and Sriracha in a small bowl. Serve on the side for dipping.

- Place potatoes in a pot; add cold water until potatoes are covered by 1 inch. Bring to a boil; reduce heat. Simmer until potatoes are softened, about 10 minutes; drain. Cool until easily handled, 10 to 15 minutes.
- Shred potatoes into thin strips with a box grater; drain excess water. Place shredded potato into a large mixing bowl. Stir parsley, flour, salt, seasoned pepper, and onion powder into the potatoes until combined. Shape potato mixture into potato nuggets.

- In a deep-fryer or heavy-bottomed pot, heat enough canola oil to come halfway up the sides of the pot, to 375 degrees F.
- Finely shred potatoes on a fine box grater. Season the potatoes with 1 1/2 tablespoons of salt and 1 teaspoon of pepper. Put the potatoes into a kitchen towel and squeeze out the excess liquid. Put the potatoes into a medium-sized bowl along with the egg and mix well. Add the flour and stir to combine. Stir in the cayenne, smoked paprika garlic powder, salt and pepper, to taste. The mixture should be workable but dry. Form the potatoes into balls or tots and fry, in batches, until golden brown, about 4 to 5 minutes. Remove from fryer and drain on a paper towel lined tray. Immediately season with salt and pepper, to taste. Transfer to a serving bowl and serve.

- Gather your ingredients.
- For the sauce: Combine sauce ingredients in small bowl.
- For the burgers: Heat a large cast-iron skillet or griddle over medium-high heat.
- Peel onions and use a mandoline or large slicing blade of a box grater to shave the onions as thin as possible.
- Place beef in a bowl, season with salt and pepper and score to separate into 4 portions. Roll beef into balls.
- Drizzle oil in pan or over balls and place the meat into pan with 3 inches separating each portion. Top each ball with 1/4 of the onions and press meat into flat patties, bonding onions into meat. Cook beef 3 to 4 minutes, flip, cook and press 2 minutes. Add cheese, 2 slices per burger, and cook 2 minutes more, 7 to 8 minutes total between both sides. Put on patty bun bottoms.
- Serve with sauce, pickles, lettuce and patty bun tops with Ranch Flavored Tater Tots alongside.
- Preheat oven to 425 degrees F.
- Whisk up spices in a bowl. Store in the refrigerator in airtight plastic container.
- Bake tots to very crisp, 25 minutes. Top with ranch seasoning to your taste. Makes 3/4 cup seasoning and 6 portions of tots.
