MOM'S MASHED POTATOES A LA KING

Steps:
- Add the potatoes, celery root and 1 tablespoon salt to a large saucepan and cover with water. Bring to a boil and cook over medium-high heat until fork tender, about 15 minutes. Drain the potatoes and celery root.
- Preheat the oven to 350 degrees F. Grease a 9-by-13-inch baking pan.
- Whip together the cream cheese and softened butter in a large bowl with a hand mixer on medium speed until thoroughly blended, about 2 minutes. Add the hot potatoes and celery root slowly, alternating with the half-and-half. Whip until blended. Sprinkle with salt and stir in the horseradish, garlic powder and white pepper.
- Pour the potato mixture into the prepared baking pan. Pour the melted butter over the potato mixture. Bake until bubbly and slightly brown, about 45 minutes. Garnish with the chives.
MASHED POTATO PIE
I don't know where this recipe originated, but it has been an old stand by on my mom's dinner party tables for years. It actually bakes up to look quite impressive. Please don't try to substitute fresh mashed potatoes (believe me I have tried) the instant box stuff provides the perfect texture.

- Make mashed potatoes according to package directions for 7-8 servings.
- Stir garlic powder, eggs, Parmesan and one cup of the mozzarella into prepared potatoes.
- Pile mixture into a 9-inch deep dish pie plate.
- Sprinkle top with 1/4 cup of mozzarella and a sprinkle of paprika for color.
- Bake at 350°F until golden on top and puffy about 45 minutes.

SCOTTISH POTATO PIE
My grandmother used to make this pie on the weekends when I was little.

Steps:
- 1. Preheat oven to 425 degrees.
- 2. Butter a 9 inch pie dish.
- 3. Arrange the bacon slices on the bottom and sides of the dish. Make sure some of the slices overhang the edges of the dish slightly.
- 4. Peel and thinly slice the potatoes.
- 5. Rinse the potato slices and dry completely.
- 6. Place 1/3 of the potato slices over the bacon in the dish.
- 7. Sprinkle 1/3 of the cheese ove the potatoes.
- 8. Sprinkle with salt and pepper to taste.
- 9. Repeat these layers twice more.
- 10. Fold the overhanging bacon on the top
- 11. Place in the oven and bake for 50 minutes or until done. You can check by piercing the potatoes with a fork to see if they are tender.
- 12. Let stand 2 minutes before slicing.
MOM'S TWO-CRUST POTATO PIE
I grew up in a Catholic family, when Catholics could not eat meat on Fridays. Fish and a side dish were Friday meals. One particularly favorite side-dish was this recipe. Hearty, filling and delicious! Cubed ham and finely chopped onions can be added to the potato and cheese mixture if you want more of a one-dish meal. Use American, muenster, havarti, or brie cheese. - Place the potatoes into a large pot and cover with salted water. Bring to a boil over high heat, then reduce heat to medium-low, cover, and simmer until tender, about 20 minutes. Drain and allow to steam dry for a minute or two. Mash the potatoes with 1/4 cup butter, 1/4 cup milk, salt, and black pepper to make medium-stiff mashed potatoes; stir in the American cheese.
- Preheat oven to 375 degrees F (190 degrees C).
- Fit a crust into a 9-inch pie dish, and fill with the potato mixture. Place the top crust on the pie, roll the edges together and crimp with a fork to seal. Stir the melted butter and 2 teaspoons of milk together in a small bowl, and brush the mixture all over the pie crust. Cut several vent holes in the top of the crust.
- Bake the pie in the preheated oven until the crust is golden brown, about 45 minutes; if the edges are getting too brown, wrap them in aluminum foil.

MY MOM'S SWEET POTATO PIE
Mom's sweet potato pies are a vital part of my family's Thanksgiving. This is a recipe she inherited from her mother. The blender incorporates ingredients so well that this makes a creamy pie beyond belief. Mom prefers her sweet potato pie without any spices at all, but I usually add pinch or two of the spices listed below. - Place pie shells in 350°F oven for about 5 minutes, or till just barely brown; set aside.
- Place remaining pie ingredients in blender container and whirl till well-blended.
- Pour equally into the 2 pie shells.
- Place in 350°F oven; bake for 30 to 40 minutes, or till filling is set.
- (Note: if crust begins to get too brown during cooking, use strips of aluminum foil along the crust ridges to keep from over-browning) While pie is cooking, glaze may be prepared: Place ingredients for glaze into mixing bowl and blend with electric mixer until smooth.

- Preheat oven to 350 degrees F (175 degrees C). Press the pie pastries into two 9-inch pie dishes.
- Place sweet potatoes into a large pot and cover with water; bring to a boil, reduce heat to medium-low, and simmer until tender, 15 to 20 minutes. Drain potatoes and let cool.

- Preheat oven to 350°. In a small bowl, combine 1 tablespoon sugar and 1/2 teaspoon cinnamon. Sprinkle half the mixture in the bottoms of both pie crusts; bake until lightly browned, 7-10 minutes. , Meanwhile, place potatoes in a large saucepan; add water to cover. Bring to a boil.
