RESTAURANT-STYLE SALSA

Food Network's Ree Drummond shares her recipe for homemade restaurant-style salsa that the whole family will love!

Restaurant-Style Salsa image

Steps:

  • Combine the diced tomatoes, whole tomatoes, cilantro, onions, garlic, jalapeno, cumin, salt, sugar and lime juice in a blender or food processor. (This is a very large batch. I recommend using a 12-cup food processor, or you can process the ingredients in batches and then mix everything together in a large mixing bowl.)
  • Pulse until you get the salsa to the consistency you'd like. I do about 10 to 15 pulses. Test seasonings with a tortilla chip and adjust as needed.
  • Refrigerate the salsa for at least an hour before serving.

Two 10-ounce cans diced tomatoes and green chiles, such as Rotel
One 28-ounce can whole tomatoes with juice
1/2 cup fresh cilantro leaves (or more to taste!)
1/4 cup chopped onion
1 clove garlic, minced
1 whole jalapeno, quartered and sliced thin, with seeds and membrane
1/4 teaspoon ground cumin
1/4 teaspoon salt
1/4 teaspoon sugar
1/2 whole lime, juiced

According to mom, she has spent 30 years perfecting this salsa and I agree, it is perfect. Although it sounds crazy she does not recommend doubling this recipe. Steps:

  • 1. Stir together all ingredients and let set for about a half hour. If you like a spicier salsa, add 1/2 of a seeded and finely diced jalapeno pepper.
  • 2. This can be stored in an airtight container in the refrigerator for no more than a week.

1 14.5oz can(s) diced tomatoes
1 4oz can(s) diced green chilies
1/2 c diced onion
1 clove garlic, minced
1/4 c fresh diced bell pepper (or a slightly heaping teaspoon dried pepper)
1/2 tsp dried basil leaves
1/2 Tbsp (slightly heaping) dried oregano leaves
pinch celery seed
1/4 c chopped fresh cilantro
dash(es) salt and pepper

EX-GIRLFRIEND'S MOM'S SALSA FRESCA (PICO DE GALLO)

My ex's mom had the best hand-chopped salsa fresca I have ever tasted back in college. Over the years, I have tweaked it to something my friends and family rave about. The trick for this salsa is marinating the onions and jalapenos in lime juice for about 5 minutes before adding the tomatoes and cilantro. There are two tricks to this recipe: 1. Hand-chop everything. It takes a while, but it is worth it. 2. The marinating is what makes this salsa special. Hope you enjoy.

Ex-Girlfriend's Mom's Salsa Fresca (Pico de Gallo) image

Steps:

  • Mix red onion, jalapeno pepper, and lime juice in a bowl. Allow to stand for 5 minutes. Mix in Roma tomatoes, cilantro, and salt; allow to stand 15 more minutes for flavors to blend.

Steps:

  • Combine tomatoes, red onion, yellow onion, green chilies, lime juice, cilantro, garlic, cumin, and salt in a food processor. Pulse processor until mixture is combined, yet remains chunky. Transfer to a bowl, cover with plastic wrap, and refrigerate at least 1 hour.
