MOM'S CHUCKWAGON BEANS
One of my Mom's most requested recipes. Great for large family gatherings, pot-lucks and cookouts! This is very hearty; not mushy at all. I've actually made this for a main dish since it's so filing. Enjoy!

Another of my husband's favorites. I got this recipe out of a cookbook called "Dining with Pioneers". It's apparently a collection of recipes by a group from Tennessee. This one was submitted by someone named Mae Hallum from Memphis.

CHUCK WAGON BEANS WITH SAUSAGE
I followed the lead of cooks of Old West cattle ranges to come up with these savory beans. Sweet and smoky, they're made extra hearty by the addition of sausage. -Nancy Moore, Bucklin, Kansas

Connie Staal doesn't have to ring the dinner bell twice when these Western-style beans are on the menu. Using lean ground beef makes the entree lighter on calories, but not on taste. "Since I began fixing lighter meals for my husband, I've learned lots of tricks to lower the fat in foods," she writes from Greenbrier, Arkansas.

Add the garlic and cook another minute. Add the chili powder and cumin and cook about a minute, stirring, until the spices become fragrant.
- Add the beans and broth. Bring to a low boil, and turn the heat to simmer. Cook for 1½-2 hours until the beans are soft, checking occasionally to be sure there's enough liquid. Add more as needed. Season with salt and serve with cornbread.
