MAMA'S DEVILED EGGS

The bacon in this recipe really makes these creamy deviled eggs stand out. We couldn't stop going back for more!

Steps:

  • 1. Boil eggs, cool and peel. Split eggs lengthwise and put egg yolks in a large separate bowl. Place egg whites on serving dish and set aside.
  • 2. Mash egg yolks with a fork in large bowl. Mince onions so they are very small pieces. Fry bacon so it is extra crispy, drain off excess grease and set aside to cool. Crush bacon.
  • 3. Add onions and bacon to egg yolks and stir well. Add wet and dry ingredients to egg mixture and mix well. Taste to see if enough salt - easier to add some than to take away.
  • 4. Two ways to stuff the egg whites: straight from the bowl with a spoon or you can transfer the egg mixture to a zip lock bag, cut off the tip and pipe it into the egg whites. Either way, once filled, place into the refrigerator for 30 minutes to chill before serving.

12 large eggs
1/2 c mayonnaise
2 Tbsp yellow mustard
6 slice bacon
1 small onion
1 tsp salt
1/2 tsp pepper
1/4 tsp cayenne pepper
1 tsp apple cider vinegar
1/4 tsp smoked paprika

Steps:

  • After eggs are boiled and shelled, cut in half lengthwise.
  • Place the yolks in a small mixing bowl.
  • Place the whites in an egg holder.
  • Smash the yolks with a fork.
  • Mix the mayo, vinegar and mustard with the yolks until smooth.
  • Fill pastry press with yolk mixture and fill each egg white with mixture.
  • Sprinkle with paprika (optional).
  • Refrigerate until serving.

8 eggs, hard boiled
1/3 cup mayonnaise
1 1/4 teaspoons white vinegar
1 1/4 teaspoons prepared mustard
paprika (to garnish)

MOM'S DEVILED EGGS

A staple of every 4th of July picnic from 1957 until the late 1990s ... I have no idea where Mom got the receipt; I can't believe I couldn't find this recipe here. The secret is the dried onion flakes. (Some recipes shouldn't be made too complicated; for me, potato salad and deviled eggs need to be kept simple, or "classic." This recipe does that.)

  • Cut eggs in half, removing yolks to a mixing bowl.
  • Mix together egg yolks, Miracle Whip, mustard, salt, and dehydrated onion.
  • Spoon back into egg whites and chill.

  • For easy-to-peel eggs, steam them rather than boiling them. To do so, add about 1/2 inch of water to the bottom of a medium-sized saucepan with a tight-fitting lid. Add a steamer basket if you have one, but it's not necessary. Over medium-high heat, bring the water to a boil. Turn the heat off. Carefully add the eggs to the basket or just to the bottom of the pan. Cover and return to a boil. Steam for 12 to 15 minutes. To check the doneness, you might add an extra egg and check it at 12 minutes to judge the cook time. Once cooked, place the eggs in an ice bath until they are completely cool.
  • Peel the eggs and slice them in half lengthwise. Carefully scoop out the yolk and place them in a small bowl. Use a fork to mash up the yolks. Add the mayo, mustard, hot sauce, and garlic powder. Mix until smooth. Add the pickle relish. Add salt and pepper to taste. Spoon the mixture equally back into the whites.
