PAMPERED CHEF CHICKEN 'N BISCUIT BAKE
I got this recipe from the consultant that hosted my party. She said she and her family loved it, so mine would too. She was right!

Steps:
- Preheat oven to 350.
- Combine soup, milk and garlic in bowl with whisk. Add chicken and vegetables. Chop onion and celery and add to soup mixture.
- Separate each package of biscuits into 10 pieces. Cut each biscuit into quarters and add to soup mixture. Stir gently.
- Pour into deep dish baker (9x9 pan would work here!). Sprinkle with cheese.
- Bake 25-30 minutes or until lightly browned and biscuits are cooked through. Let stand 5 minutes before serving.

GAIL'S CHRISTMAS COOKIES
This is from Gail's grandmother Zick, who came from Germany when she was 14. She was born in the 1880's. It has become one of our family traditions, and frequently a favorite Christmas present.

Steps:
- Cream butter and sugar.
- Beat in eggs.
- Add sour cream and flavoring, mix well.
- Sift in dry ingredients.
- Refrigerate 8 hours or more.
- Roll thin.
- Cut with cookie cutters, making a hole for hanging.
- Bake at 350°F until only slightly brown, about 7-10 minutes.
- Cool.
- Icing: Whip egg white until stiff.
- Add sugar and lemon juice as needed.
- Ice cookies.
- Decorate and let dry.
- Put dental floss through hole and hang on tree (making sure they are above level of hungry children or pets, or not!).
WARM BACON ENDIVE DRESSING
My husband loves his mom's endive dressing, so I asked her to share the recipe with me. When I make this salad, I usually serve it with boiled potatoes and sliced smoked ham.

Steps:
- In a large skillet, cook bacon over medium heat until crisp. Remove to paper towels; drain, reserving 1 tablespoon drippings. Set bacon aside. Saute the onion in the drippings until tender. Add the sugar, cornstarch, salt and vinegar; stir until smooth. Gradually stir in the milk until smooth. Bring to a boil; cook and stir for 2 minutes or until thickened. Reduce heat. , Stir a small amount of hot mixture into egg; return all to the pan; stirring constantly. Bring to a gentle boil; cook and stir 2 minutes longer. Remove from the heat., In a large salad bowl, combine the endive, hard-boiled eggs and reserved bacon. Add desired amount of warm dressing; toss to coat. Refrigerate leftover dressing.

This is my sister's recipe had at her house one time and have been hooked to it ever since. I think she said it came from the Goya website but I've looked and its not there. Takes a little bit of work to make this but soooo worth it in the end.

- Heat oil in a big skillet or sauce pan add frozen sofrito, cilantro
- season chicken with adobo and 2 packets of sazon until well browned.
- add every thing else and cook for 1/2 hour
- then add 1 can of beans and the other packet of sazon.
- cook for another half an hour, the last 5 min of cooking add spanish olives.
- serve with yellow rice.

MOM'S FRUITCAKE ROCKS
This was the recipe Mother used for years. She really didn't use recipes, but I did find this in some old cookbooks after she passed away. She didn't write down oven temp or cook time so that is my estimate. Cook time is per cookie sheet. She also didn't write down yield, but it makes a large batch, so yield is an estimate also. Cook these around Thanksgiving, place in cookie tin with wax paper between layers and freeze. Take out just before Christmas and they are wonderful.

- Preheat oven to 350°F.
- Cream butter and sugar.
- Add eggs and cream.
- Slowly mix in flour and juice or wine.
- Add fruit and mix well.
- Be sure that the fruit is chopped in large chunks.
- Add nuts and mix.
- Drop by large tablespoonfuls onto cookie sheet and bake until brown.
- (Mother never timed, she just knew. I am estimating the time to be 20 minutes per cookie sheet, but this could vary depending on size of cookies).

- Clean Dandelions under running water and cut at base to free leaves. Boil for 30 minutes or until tender, drain and cool with cold water. Squeeze out all the water.
- In a medium bowl mix eggs, salt, pepper, 1/2 of Parmesan cheese and 1/2 of garlic powder.
- Using a 10" non stick frying pan, put in olive oil, place Dandelions in pan and spread out to cover the entire bottom. Using a salt shaker, salt Dandelions lightly, sprinkle 1/2 of leftover cheese and garlic powder on top of Dandelions. Turn on stove to med-high and fry for 1-2 minute Now the tricky part. For safety, put on a oven mitt, Take a dinner plate and place on top of dandelions, remove from stove and flip over the Dandelions onto plate and re-install into frying pan.
- Take mixture and pore on Dandelions starting at the edges and working your way to the center. The "pie" won't be completely covered, that's OK. Let cook for 2-4 minutes, Flip the "pie" over again and top with the remaining ingredients.
- Cut with pizza cutter and serve hot.

MOMS' ENDIVE/DANDELION DISH
My mom made this wonderful meal a lot. I think she said it was a German (she was German-Irish) dish..If she was lucky enough, she picked dandelons to use instead of endive.....She served it as a main meal. My hubby really loves it. Looks like it's time for me to make it again after so many years...GBGBeve.....

Steps:
- Wash,& dry endive and tear into bite-sizes; Put into large bowl and add the hard-boiled eggs, onion, potatoes.
- Brown bacon till very crisp, remove bacon from skillet.
- Drain on paper towels.
- Leave bacon drippings in skillet on low.
- Mix together in a jar/glass the dressing ingredients.
- Pour dressing into drippings and heat this til almost boiling.
- Pour over endive, toss.
