OLD FASHIONED APPLE CREAM PIE, MOM'S
This is a very old recipe. Mom made this pie when I was very young. Later she made the streussel topped apple pie for her pie fans. This pie was less expensive to make, especially when apples and cream were readily available on the farm. Mom also used honey in place of sugar sometimes. Its not as sweet as many apple pies but...

Steps:
- 1. Mix together sugar, cinnamon, and flour. Toss apples in this mixture and then pour them into the pie shell. Gently pour cream over all. Sprinkle with more cinnamon sugar if desired. Bake at 350 degrees for 45-60 minutes until apples are done. (Different varieties of apples cook differently so check their tenderness as baking progresses.)
- 2. CINNAMON SUGAR TOPPING: Optional. Mix together 2 tablespoons sugar and 1 teaspoon cinnamon for topping pie.

- Preheat oven to 450 degrees F (225 degrees C). Fit bottom crust into a 9 inch pie plate.
- In a small bowl, mix together sugar, flour, salt, cinnamon, and nutmeg. Place sliced apples in a large bowl and sprinkle with sugar mixture. Toss until apples are thoroughly coated. Spoon apples into pan.
- Dot apples with butter or margarine, then sprinkle with whiskey. Cover with top crust. Seal edges and cut steam vents in top.
- Bake in preheated oven for 10 minutes. Lower temperature to 350 degrees F (175 degrees C) and bake an additional 40 minutes. Serve warm.

- Preheat oven to 425 degrees F (220 degrees C).
- In a bowl combine apples, sugar, flour, cinnamon, nutmeg and salt. Place mixture in a pastry-lined 9 inch pie plate. Dot with butter and adjust top crust that has been vented.
- Place in oven and bake at 425 degrees F (220 degrees C) for 10 minutes. Turn oven temperature down to 275-300 degrees F (135-150 degrees C) and bake 40-50 minutes or until crust is golden brown and apples are tender. Let cool and serve.

- Line a 9-in. pie plate with bottom crust; trim crust even with edge of plate. Set aside. , In a large bowl, toss apples with lemon juice. Combine the sugar, flour, cinnamon and nutmeg. Arrange half of the apples in pastry shell; sprinkle with half of the sugar mixture. Repeat layers. Dot with butter. , Roll out remaining pastry to fit top of pie; place over filling. Trim, seal and flute edges. Cut slits in pastry. Brush with milk and sprinkle with additional sugar. , Cover edges loosely with foil. Bake at 425° for 20 minutes. Remove foil; bake 30-35 minutes longer or until crust is golden brown and filling is bubbly. Serve warm if desired or cool on a wire rack.

- Place the flour, sugar and salt in a food processor. Close lid and pulse a few times. With the processor on, gradually add the cubed butter. Then add the ice water. As soon as a dough ball forms, turn off the machine. (If you don't have a food processor, you can cut the butter into the flour mixture in a bowl with a pastry blender or a fork. Then stir in the water until completely combined. Knead with hands to form the dough.)
- Roll out remaining dough as directed above. Use a pizza cutter to cut dough into 8 strips. Create a lattice pattern on top of pie. If desired, use one of the strips to cut into 3 pieces and make a braid. Use the braid as one of the strips to weave into the lattice. Fold the edges under then use your fingers to crimp edges or you can use a fork to press around the edges if that's easier. Brush with egg and sprinkle with sugar.

- Prepare the Crust: Using your fingers, mix together flour, butter, and salt in a large bowl until butter is well incorporated. Gradually sprinkle 2 to 4 tablespoons very cold water into mixture, kneading as you add water, until dough just comes together. (You may not need to add all the water.) Turn dough out onto a lightly floured work surface; knead until it forms a smooth ball, 2 to 3 times. Divide dough in half, and shape into 2 disks. Wrap each disk in plastic wrap; chill at least 2 hours or up to overnight.
