OLD FASHIONED COCONUT CREAM PIE
This is a tried-and-true, old-fashioned coconut cream pie. Took many years of searching and baking to find the right one and this is it! Enjoy!

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Spread the coconut on a baking sheet and bake it, stirring occasionally, until golden brown, about 5 minutes.
- In a medium saucepan, combine the half-and-half, eggs, sugar, flour and salt and mix well. Bring to a boil over low heat, stirring constantly. Cook, stirring constantly, for 2 minutes more. Remove the pan from the heat, and stir in 3/4 cup of the toasted coconut and the vanilla extract. Reserve the remaining coconut to top the pie.
- Pour the filling into the pie shell and chill until firm, about 4 hours.
- Top with whipped topping and with the reserved coconut.

OLD FASHIONED APPLE CREAM PIE, MOM'S
This is a very old recipe. Mom made this pie when I was very young. Later she made the streussel topped apple pie for her pie fans. This pie was less expensive to make, especially when apples and cream were readily available on the farm. Mom also used honey in place of sugar sometimes. Its not as sweet as many apple pies but...

Steps:
- 1. Mix together sugar, cinnamon, and flour. Toss apples in this mixture and then pour them into the pie shell. Gently pour cream over all. Sprinkle with more cinnamon sugar if desired. Bake at 350 degrees for 45-60 minutes until apples are done. (Different varieties of apples cook differently so check their tenderness as baking progresses.)
- 2. CINNAMON SUGAR TOPPING: Optional. Mix together 2 tablespoons sugar and 1 teaspoon cinnamon for topping pie.
OLD FASHIONED CREAM PIE
Beat the heck out of the ingredients and watch baking time. One hour usually does it. I don't know where I got this recipe, but I've had it a long time. I think it's great!

This is from "Home Cooking with Dave's Mom" pg. 166-167. Dave's Mom writes: "I concocted this recipe by taking the best ingredients and suggestions from three differnt sugar cream pie recipes. I've had it for years and the whole family likes it."

Steps:
- 1. In a small bowl mix sugars, flour & salt. Gradually stir in heavy cream.
- 2. Pour into pie shell and sprinkle with grated nutmeg.
- 3. Bake at 400 degrees for 15 minutes. Reduce heat to 350 degrees, bake for 20-25 minutes longer.
- 4. NOTE: Center of pie will be slightly runny when done.
OLD FASHIONED CREAM PIE
This is a long time family favorite comfort food (if pies can be a comfort food). I think my mom told me that it originated with her grandmother who was a farmer which makes sense since all the ingredients are basic staple items. For the faster times, we have made it in the microwave and its actually easier because we don't have to worry about scorching... ENJOY!

Steps:
- Melt butter in double boiler. Mix in sugar into butter.
- Mix 1/4 cup of half and half with cornstarch.
- Add remaining half and half to double boiler butter/sugar mix.
- Stir in half and half/cornstarch into the butter/sugar/half and half combination.
- Heat over med-low heat, stirring constantly until thickens.
- Pour into baked pie shell, lightly sprinkle with nutmeg (for garnish).
- Bake at 400 degrees for 5 minutes.
- Refrigerate.
- FOR MICROWAVE - mix ingredients together in safe bowl, microwave for 10 minutes, stirring at 2 minute intervals until thick. Pour into prepared shell, sprinkle with nutmeg and bake at 400 degrees for 5 minutes.

- In a two-quart bowl, mix the first 4 ingredients together.
- Fold the beaten egg whites in until all are well mixed.
- Pour into unbaked pie shell of 9inch pan.
- Sprinkle nutmeg on top and bake at 325 degrees for 1 hour.
- When taken from oven, filling will seem a little shaky, but when cooled, will be creamy.
- Prep time does not include making pie crust.
