MORAVIAN CHRISTMAS LOAF

Raisin bread amped up! An old-fashioned recipe from the Pennsylvania Dutch chapter of the United States Regional Cookbook, Culinary Arts Institute of Chicago, 1947. Overnight rising time not included in preparation time.

Moravian Christmas Loaf image

Steps:

  • Add softened yeast to milk.
  • Add 3 cups flour, and salt; mix well.
  • Cover and let rise in a warm place overnight.
  • In the morning, heat the milk; add butter and stir until melted.
  • Combine with yeast mixture and add sugar, fruit and remaining flour; knead well until dough is no longer sticky (use more flour, if necessary).
  • Cover and let rise until double.
  • Shape into loaves, place in greased loaf pans and sprinkle with sliced almonds.
  • Let rise until doubled.
  • Bake at 375°F for 40 minutes.

3 cups milk, lukewarm
1/2 fresh yeast cake, softened in
1/4 cup water
6 -8 cups flour
1 teaspoon salt
1 cup butter
1 cup sugar
1/2 lb raisins, cut
1/2 lb currants
1/4 lb candied citron peel, chopped
1/2 cup almonds, sliced

Moravian lovefeast bread is tradionally made in the shape of sweet rolls and served after church services on Christmas Eve. This sweet bread is great for breakfast or coffee.

Steps:

  • All ingredients must be at room temperature.
  • Add ingredients in the order specified in your bread machine owner's manual.
  • Set bread machine on standard bread making setting.
  • Select crust light.

2 cups bread flour
2 teaspoons grated orange zest
1 pinch ground nutmeg
1 pinch ground mace
3/4 teaspoon salt
2 1/2 tablespoons granulated sugar
4 teaspoons nonfat dry milk powder
4 teaspoons unsalted butter
1/3 cup plain mashed potatoes
1/3 cup water, plus
1 teaspoon water
2 teaspoons freshly squeezed orange juice
1 large egg

This special bread is filled with good things. It's the perfect Christmas bread. And this makes 2 loaves, in case you want to give one to a neighbor.

Steps:

  • Heat oven to 350°.
  • Grease 2 loaf pans.
  • Cream butter and sugar.
  • Beat in eggs and vanilla.
  • Mix flour, baking soda and salt.
  • Add to creamed mixture alternately with bananas.
  • Stir in coconut, almonds, cherries and dates.
  • Pour into pans.
  • Bake for 55 minutes, until pick comes out clean.
  • Cool for 15 minutes before removing from pans.

1 teaspoon vanilla
2 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
2 ripe bananas, mashed (medium size)
1 cup coconut
1/2 cup chopped almonds
1/2 cup chopped maraschino cherry
1/2 cup chopped dates
