MRS FALAFEL'S SATAY PATE

This comes from the newsgroup alt.food.vegan. Mr Falafel posts the most amazing recipes and the best of all originate with his wife. I'm posting this one on Zaar because I want to try it for myself and I don't want to lose the recipe. This WILL be made in the future. Use it as pate, or as part of a filling in a tortilla...It is one of those very adaptable recipes.

Mrs Falafel's Satay Pate image

Steps:

  • Throw all the ingredients into a blender and mix until smooth.
  • Add a little water if it is too lumpy.
  • Chill in the fridge for 30 minutes.

1 (14 ounce) can haricot beans, drained & rinsed
4 tablespoons crunchy peanut butter
1 tablespoon sesame oil
2 tablespoons soy sauce or 2 tablespoons tamari
1 pinch cayenne pepper
1 spring onion
1 clove garlic
2 tablespoons vegetable oil
4 tablespoons lime juice
1/4 cup desiccated coconut

CAPYBARA CHEESECAKE

This recipe comes from Ronny on the alt.food.vegan newsgroup. Ronny is renowned for her cakes. I haven't yet made this one but I bet right now from past experience of her recipes that it will work very well indeed. Indeed I'm posting it here so that I don't lose it! Times include overnight chilling.

Capybara Cheesecake image

Steps:

  • Melt chocolate and grind up biscuits.
  • Mix together.
  • Press into a springform cake/flan tin.
  • Freeze for about half an hour.
  • Put all the tofu layer ingredients except agar agar into a pan, blend with hand blender, then heat.
  • Boil the agar agar in a little water separately, then add to other pan.
  • Bring to boil, stirring then remove from heat.
  • Pour onto base.
  • Put in fridge till set, preferably overnight.
  • Mix agar agar with a little water till smooth in a cup.
  • Put orange juice in a pan, add agar agar then bring to boil.
  • Arrange orange segments on top of cheesecake.
  • Spoon orange jelly on top.
  • Allow to set.
  • Garnish with a drizzle of melted chocolate.

400 g tofu
1 1/2 teaspoons agar-agar
1/2 cup soya milk
4 tablespoons syrup (bang goes my diet...)
1 lemon, juice of
grated fresh lemon rind
1 grated orange, rind of
2 cups orange juice

1 packet digestive biscuit (Graham crackers, if you are American)
50 g chocolate

CROCK POT LENTIL AND APRICOT SOUP

This recipe is the crock pot adaptation of Mrs Falafel's Lentil and Apricot Soup from the alt.food.vegan newsgroup. It must be one of the most popular recipes ever to come up in that group and it is also superb and even easier in the crock pot. I throw it all together before work and eat it about 8 hours later. The apricots mush down and all it needs is a quick stir before serving. PS. Auto setting on my crockpot is one hour on high and then the rest on low.

Crock Pot Lentil and Apricot Soup image

Steps:

  • Wash and drain lentils.
  • Chop up everything that requires chopping and throw the lot in the crock pot.
  • Cook on the AUTO setting of the crock pot Garnish with cilantro when serving.
  • Really nice with crusty bread!

1 cup red lentil
1 onion, diced
1 teaspoon oil
1 garlic clove, finely diced
4 1/3 cups water or 4 1/3 cups stock

1 pinch chili powder or 1 pinch chili flakes, to taste

Sweet and Hot Sesame Nori Strips image

Steps:

  • Preheat oven to 350 degrees F.
  • Whisk together the rice syrup and oil in a small bowl then stir in the cayenne.
  • Place the sesame seeds in a small bowl, with water to cover.
  • Swish to rinse and pour off any floaters.
  • Drain the seeds in a strainer, then transfer to a dry skillet and toast until fragrant.
  • Tear each nori sheet into three strips.
  • Use a pastry brush to paint each strip with a thick coat of the syrup mixture.
  • Sprinkle liberally with toasted sesame seeds and sprinkle liberally with salt.
  • Place the nori strips on a parchment covered baking sheet and bake for 10 minutes to allow the coating to set, then turn the strips over and paint the other sides with the syrup mixture.
  • Sprinkle as before with sesame seeds and salt.
  • Return to the oven for 10 minutes, then set aside for 20 minutes to crisp.
  • Break each strip in two pieces.
  • Great snack with hot sake or beer.
