What could be better than an indulgent dessert made from ingredients you have sitting in your pantry and that never needs to go into the oven? These cookies take just minutes of work; most of the time is spent waiting for them to harden into the rich, nutty, chocolaty delights that they are.

- Line a baking sheet with wax paper or parchment.
- Bring the sugar, milk, butter and cocoa to a boil in a medium saucepan over medium heat, stirring occasionally, then let boil for 1 minute. Remove from the heat. Add the oats, peanut butter, vanilla and salt, and stir to combine.
- Drop teaspoonfuls of the mixture onto the prepared baking sheet, and let sit at room temperature until cooled and hardened, about 30 minutes. Refrigerate in an airtight container for up to 3 days.

- In a large saucepan, combine the first 5 ingredients. Bring to a boil, stirring constantly. Cook and stir 3 minutes., Remove from heat; stir in peanut butter and vanilla until blended. - Melt the butter in a 3 1/2-quart saucepan over medium heat. Stir in the sugar and milk and bring to a boil; boil for 1 1/2 minutes.
- Remove from the heat and immediately stir in the oats, peanut butter, vanilla and salt, stirring to combine. Add the chocolate, stirring until just combined.
- Drop the dough by rounded tablespoonfuls on the prepared baking sheets. Let the cookies stand until set, about 30 minutes.
MRS. MCKENZIE'S CHOCOLATE NO BAKE COOKIES
I thought for sure this recipe would be here on Zaar but I couldn't find it. My mom got this recipe from an old family friend way back in the early 1960s. It's a family favorite that I've made so many times that I don't even need to use a recipe any more... it's memorized!

Steps:
- In a large saucepan, mix together sugar, butter, cocoa, milk, and salt.
- Bring to a boil over medium high heat and AFTER the mixture comes to a boil, cook for 2 minutes (time it).
- Remove from heat and stir in vanilla (be careful b/c the vanilla will make the chocolate mixture splutter a bit).
- Quickly stir in oats and then drop by teaspoons-full onto waxed paper covered newspaper (if you don't have newspaper, waxed paper covered baking sheet is fine).
- Let cool before eating, if you can.
- Be careful NOT to lick the spoon before the chocolate mixture cools -- you can burn your tongue. :).

You can eat them fresh out of the pan in a bowl with a spoon, which is delicious with a glass of milk besides.
