Steps:
- Preheat oven to 450 degrees F (230 degrees C).
- Mix paprika, sugar, salt, pepper, garlic powder, onion powder, and cayenne pepper together in a wide, shallow bowl. Dredge pork chops in the spice mixture to coat and arrange on a baking sheet.
- Bake chops in preheated oven until no longer pink in the center, about 20 minutes. An instant-read thermometer inserted into the center should read 145 degrees F (63 degrees C).

Steps:
- Heat the oven to 200C/fan 180C/gas 6. Toss the potatoes, oil, garlic and thyme on a shallow roasting tray and mix will with your hands to coat in the oil. Season well. Roast for 25 mins until the potatoes are just turning tender when pierced with a knife.
- Whisk the honey and mustard together in a small bowl. Season the pork chops with salt and pepper, then brush with half the marinade. Nestle into the potatoes on the tray, and bake for another 10 mins before turning the chops and spooning over the remaining glaze. Continue to bake for 10 more mins until cooked through.

Steps:
- Preheat the oven to 375 degrees F (190 degrees C). Grease a 9x13-inch baking pan with oil.
- Scatter onions evenly into the baking pan. Place pork chops on top of onions in the pan.
- Combine maple syrup, mustard, garlic, red pepper, chili powder, and salt together in a small bowl. Pour mixture evenly over pork chops. Cover baking dish with aluminum foil.
- Bake in the preheated oven until chops are no longer pink in the center and an instant-read thermometer inserted into the center reads 160 degrees F (71 degrees C), 1 to 1 1/2 hours.

Mrs. Mullings (nobody seems to call this wonderful woman by a first name) used to be Erroll Flynn's private cook when he hung out in Port Antonio, Jamaica. Though she says his favorite breakfast was raw dolphin on the dock and his favorite lunch was virtually any alcoholic liquid, she occasionally sneaked in her amazing pork chops. They are now served at her Port Antonio inn, DeMontevin Lodge.

Steps:
- Preheat oven to 350F (175C).
- Rinse and dry pork chops, then season with salt and pepper. Sprinkle with garlic.
- Heat oil in a large skillet over medium heat. Add pork chops; brown on both sides. Transfer the pork chops to a baking pan.
- Coarsely chop chile, onions, tomato and bell pepper and spread over chops. Add butter, water and thyme. Cover and bake until tender but not dry, about 35 minutes.
- Serve with guava jelly or applesauce.
