Mom's Yummy Hamburger Stew image

Steps:

  • 1. Brown the onion and burger in a little oil.
  • 2. Add the veggies and allow to cook in the burger/onion mix for about 5-10 minutes.
  • 3. Add the V-8 juice and the spices.
  • 4. Simmer slowly until potatoes and carrots are done. Serve with Aunt Marcia's Tennessee Cornbread. Oh My!

1-2 lb hamburger (i use ground moose because i can)
1 medium onion, chopped
3-4 c carrots, thick slice
4 c chopped cabbage
6-8 potatoes, peeled and chunked into big bite chunks
1 can(s) v-8 juice, 46 oz. size!
1 1/2 tsp minced garlic
1 Tbsp celery seed
salt and pepper to taste

  • In a large saucepan, cook beef and onion over medium heat until meat is no longer pink; drain. Stir in the tomatoes, broth and water. Bring to a boil., Add celery, carrots, barley, thyme and pepper. Reduce heat; simmer, covered, for 10-12 minutes or until vegetables and barley are tender., Remove from heat; stir in parsley. Let stand 5 minutes.

Steps:

  • In a large pot (Dutch oven), place diced onions, garlic and hamburger. Stir and cook until done. Drain off the majority of the fat from the pot.
  • Add canned tomatoes, tomato soup, chick peas, kidney beans, lentils, barley, vegetables and seasoning. Add approx 2 cups of water, to thin out soup a little.
  • Bring to a boil, and then simmer for approx 1 hour, or until barley and lentils have softened.
  • Dish soup into bowls and top with small amount of grated cheese.

MMM OH SO GOOD SURPRISE HAMBURGER SOUP

This is not your average hamburger soup. I was planning to make chili (which I also did) and decided to make 4 lbs. of hamburger. I had a head of cabbage and some extra veggies left from last garden pick so here came the soup decision. I am tasting it now before I post because I wanted to make sure the flavors came together well. THEY DID! Dh loves these surprises.

Mmm Oh so Good Surprise Hamburger Soup image

Steps:

  • In soup pot brown ground beef til just done, breaking into pieces but leaving chunks.
  • Add beef broth, cabbage, barley, potato quarters, seasonings.
  • Boil for 10 minutes.
  • Add canned veggies, quartered tomatoes,onions, and green beans.
  • Simmer 1 hour.
  • Salt and pepper to taste.
  • Add crackers or crusty bread and serve.
  • Note: I added Parmesan cheese to top, DH added cheddar.
  • Note: estimates for spices as I used fresh and I also used more garlic but not everyone loves garlic, suit to taste. I also used homemade beef broth but measured for recipe.

MOM'S HAMBURGER SOUP

I made a pot of Mom's Hamburger Soup this afternoon which is really smelling and tasting good. And I just emailed my daughter and asked her to bring home some crusty rolls from Panera's to have with it. This is a thick and hearty soup -- perfect for dunking the bread. It's cold outside, so this will be great for supper tonight. Since it's one of those recipes that isn't written down, I decided to post it while everything is fresh on my mind. Mom always used spaghetti, but I think it gets too mushy when the soup is warmed up for the 2nd or 3rd time. And she didn't use the steak seasoning, but to me it seems to lift the taste of the meat and tomatoes.

Steps:

  • Use 8 quart stock pot.
  • Combine first 4 ingredients and cook together until hamburger is loose and no longer pink. Do not overcook. Drain off grease and return meat mixture to the stock pot.
  • Add the diced tomatoes, tomato juice and steak seasoning to the meat mixture; simmer on low heat for 30 minutes. Stir after 15 minutes.
  • Add the frozen mixed vegetables; simmer on low heat for 60 minutes, stirring every 15 minutes.
  • Add the rice and 2 C water; continue to simmer for about 60 minutes stirring frequently. Add additional water if soup is too thick.

Mum's Stove-top Ground Beef Stew With Dumplings image

Steps:

  • 1. In a 3 quart pot, heat meat slowly on stove till browned, NOT fried. I think Mum said med. heat and adjust lower, if needed. Add a little salt and pepper.
  • 2. When meat is browned, cover with water to about 1/2" over the meat, add onion and simmer for 20 mins. Mum never drained the meat first. (watch and stir if necessary to prevent sticking).
  • 3. Add both the can of broth and can of water and simmer for ½ hr - 45 mins. Stir occasionally to prevent any sticking.
  • 4. Add cut veggies and a little more salt and pepper to taste. Let simmer slowly till all veggies are done, about 45 mins to 1 hr. Thicken with flour gradually to consistency you prefer.
  • 5. This is a THIN stew so you need something to sop up the juices. Make small to medium size Bisquick dumplings and plop on top of stew about 15 mins before you eat. Make sure you have enough liquid in the stew, because dumplings will absorb moisture. You turn back the temp so that the dumplings basically steam. Cover for 15 mins and serve. Crusty bread works too :)
