MEXICAN-STYLE STEAMED MUSSELS
I always keep an eye out for mussels to go on sale at the local fish counter, just so I can make this yummy recipe. It makes for a great quick light meal. Be warned, though: four pounds of well-prepared mussels can disappear much faster than you think. Also a great recipe to use with clams, if that's what you prefer. Prep time does not include time to clean the shellfish.

Steps:
- Heat the oil in a large pot (stock pot) over medium heat.
- Add the onions, garlic, tomato, and jalapenos.
- Cook just until softened.
- Add the wine, water, salt and pepper, and bring to a boil over high heat.
- Add the mussels and cilantro and cover the pot.
- Steam for 8-10 minutes, carefully shaking the pot occasionally to shift the mussels around.
- The mussels are cooked when they are fully opened.
- Be sure to discard any mussels that do not open.
- Dish the mussels and broth out into bowls.
- Serve with fresh crusty bread or warm fresh corn tortillas for sopping up the broth.

SPICY MUSSELS WITH MEXICAN SEASONINGS

Steps:
- Scrub and debeard the mussels.
- In a saucepan large enough to hold the mussels with room to spare heat three tablespoons of the oil. Add the onion, scallions and garlic and saute over low heat until tender.
- Add the tomatoes and jalapeno peppers and bring to a simmer. Stir in the mussels and add the wine. Return to a simmer, cover and cook over medium heat until the mussels have opened, about 10 minutes.
- Remove the mussels to individual bowls, discarding any that have not opened. Add the lime juice and coriander to the sauce, pour over the mussels and serve.

MUSSELS IN MEXICAN BEER
Simple, de-lish and ready in less than 10 minutes, this recipe should be made first in any menu so you and yours can enjoy mouthfuls of mussels while you cook.

- In a deep skillet with a cover preheated over medium high heat, add oil, garlic, onion and jalapeno. Season with salt. Saute 2 minutes. Arrange mussels in the pan. Pour in beer and tomatoes and shake the pan to combine. Cover pan and cook 3 minutes or until mussels open. Remove from heat and spoon sauce down into shells. Garnish with parsley or cilantro. Serve immediately from the pan.

This is a wonderful appetizer for 4 people, or a main dish for 2 people. The original recipe came from a wonderful Spanish restaurant in Baltimore many years ago.

- Scrub the mussels under the faucet and remove the beards, and then set aside.
- In a 6 quart saucepot place butter, flour, wine, lemon juice and clam juice and bring to a boil over high heat. Add the mussels and return to a boil. Reduce heat to low and simmer covered 3 minutes or until mussels are opened. With a slotted spoon remove mussels to 2 or 4 deep serving bowls or dishes and set aside.
- Place the liquid into a blender or food processor and add the parsley, garlic cloves, shallot, salt and pepper and blend well. Pour the sauce over the mussels and serve with a French or Italian bread to sop up the wonderful sauce.

MUSSELS AL FORNO WITH SALSA CALABRESE
After we signed our lease, Mario took a critical look at the Pizzeria, and the first thing he said was "There's no kitchen!" For a second I panicked, until he added, "It's perfect! Everything you make in the Pizzeria should come out of the pizza oven." With few exceptions, we have stayed true to that rule. We are always looking for creative, unexpected ways to use the oven, and these mussels, served with Salsa Calabrese, a red pepper-spiked mayonnaise, is a perfect example. The salsa recipe makes more than you will need for the mussels. Serve the rest on the side, and use what you have left on a sandwich or as a condiment for grilled fish, chicken, or meat.

- To make the Salsa Calabrese, stir the mayonnaise and Calabrian Bomb together in a small bowl. Use the salsa or transfer it to an airtight container and refrigerate for up to three days.
- To prepare the mussels, adjust the oven rack to the middle position and preheat the oven to 400°F.
- Scrub the mussels to clean them thoroughly and pull off and discard the beards if they are still attached.
- Combine the mussels, olive oil, wine, garlic, red pepper flakes, and 1/4 cup of the parsley in a bowl and toss to combine. Reserving the marinade left in the bowl, arrange the mussels in a baking dish, an ovenproof sauté pan (such as a cast-iron skillet), or four individual baking dishes, with the pointed ends up. You want to use a dish or pan that holds the mussels snugly in a single layer. Pour the remaining marinade over the mussels and bake them for 10 to 15 minutes, until all, or all but a very few, of the mussels have opened. Remove the mussels from the oven and discard any that haven't opened. Drizzle 1/4 cup of the salsa over the mussels, sprinkle with the remaining parsley, and serve in the dish you baked them in, with the crostini and the remaining salsa on the side.
