Mustard-seed chilli prawns image

Steps:

  • Shell and devein prawns, leaving tails intact.
  • Cut along back of prawn, taking care not to cut all the way through; flatten prawn slightly.
  • Rub turmeric and chilli into prawns in medium bowl.
  • Heat oil in large frying pan; cook mustard seeds and garlic, stirring, until seeds start to pop.
  • Add prawn mixture; cook, stirring, until prawns just change colour.
  • Mix in coriander.
  • Tip: If you like hot dishes, don't seed the chillies before chopping, as removing the seeds and membranes lessens the heat level.
  • serving suggestion: Serve mustard-seed chilli prawns with saffron rice.
  • Garnish with spring onion curls.

  • Make marinade: Toss drained mustard seeds into a grinder or food processor; add ginger, garlic, red chillies, sugar, onion, turmeric powder, and sea salt. Pour in white vinegar and grind to a fine paste. Alternately, hand grind on a sil-batta, pata-varvanta, or ammi to a fine paste.
  • Marinate prawns: Tip prawns into a non-reactive bowl (such as glass). Add prepared marinade and mix with a spoon or spatula till well coated. Set aside to marinate for 30 minutes.
  • Place a kadhai or wok on high heat. Slide prawns along with marinade into the kadhai and stir well. Pour oil over prawns and stir for about 2 minutes. Cover and cook for 3 minutes, then remove lid and cook, stirring occasionally, till prawns are cooked through, another 4 minutes.
  • Remove from heat. Transfer to a bowl and serve hot with rice. Cook’s Note: While many people like to cook their prawns for 30 minutes or more, we prefer to cook them till they are just done, so that they remain tender and melt in your mouth. Here we have cooked them for 10 minutes, much longer than the 4 minutes we usually cook our prawns, as the mustard sauce needs time to cook.
