FREEZER DATE COOKIES

This recipe is from the 1981 Sunset Vegetarian Cooking cookbook. The cookies include a combination of dates, coconut and walnuts. Preparation time does not include time for dough to chill in freezer. Cooking time is approximate, depending on how many cookie sheets are in the oven at one time!

Steps:

  • With an electric mixer, beat butter, egg and vanilla until smooth.
  • In separate bowl, whisk together flour, baking powder and salt.
  • Gradually add flour mixture to butter mixture, beating until blended.
  • Stir in dates, coconut and walnuts.
  • Form dough into two 1-1/2-inch rolls; wrap in wax paper or foil.
  • Chill in freezer until firm enough to slice easily (about 2 hours) or for as long as 1 month.
  • When ready to make, preheat oven to 350 degrees Fahrenheit.
  • Lightly grease several cookie sheets.
  • With sharp knife, cut rolls into 3/8-inch slices.
  • Place slices on prepared cookie sheets.
  • Bake about 12 minutes or until golden.
  • Cool on wire rack.

Steps:

  • Filling:.
  • Break up dates, cover with water, add 2 tespoons of lemon juice. Boil for 2 minutes. Add dates to cookie, fold cookie in half. Press edge with fork.
  • Cream butter and sugar together well.
  • Slowly mix in milk.
  • Use a wooden spoon Mix all Dry ingredients together.
  • Now slowly add to wet batter.
  • Mix well.
  • Roll out the dough to about 1/8 inch thick.
  • Cut into 3 inch diameter round, the top of the large mayonnaise jar works well.
  • Put on each round circle 1 tablespoon of dates, or how much you like.
  • Bake on ungreased bake sheet.
  • Bake at 350 for 8 - 10 minutes.

Steps:

  • Preheat oven to 350º F (180º C). Spray baking sheet with non-stick cooking spray or line with parchment paper.
  • In a small bowl, soak 3/4 cup of the chopped dates in the boiling water for 15 minutes.
  • Meanwhile, in a large bowl, combine flour, baking powder, baking soda, ginger, cinnamon, nutmeg, cloves, and salt.
  • Add egg, brown sugar, molasses, and butter to date and water mixture, and mix until well combined.
  • Make a well in the centre of the dry ingredients.
  • Pour in the liquid ingredients and stir until combined. Stir in remaining 1/4 cup chopped dates.
  • Cover cookie dough with plastic wrap and refrigerate 1 hour.
  • With lightly floured hands, roll cookie dough into 1-inch (2.5cm) balls, then roll in granulated sugar.
  • Place 2 inches apart on prepared baking sheets. Bake 8-10 minutes or until cookie dough is still soft when lightly touched. Cool completely on rack. Store cookies in a cookie jar or a tightly sealed container.

  • Preheat oven to 350 degrees, with racks in upper third and middle. In a medium bowl, whisk together flour and baking powder. Add dates, pecans, and raisins, and stir with a wooden spoon until fruit and nuts are coated. In a small bowl, whisk together eggs, 1/2 cup sugar, oil, lemon juice, vanilla, and salt.   • 1. Although they seem time consuming to make, there is something very special about them, soft and sweet!
  • 2. Sift ingredients and mix together dough. Make the filling, stirring until quite thick, add a little more water if needed; and cool a short while. Roll the dough and cut rounds, as small as you like with 1/2 tsp.of the date filling on one layer of dough, cover and pinch the top layer to seal.
  • 3. Grease a baking sheet, and preheat the oven to 350 degrees. They bake for 10 to 12 minutes. Watch them for the last couple of minutes, so they don't get too brown.

MIX THE FOLLOWING INGREDIENTS; STIRRING IN WATER AND VANILLA LAST.

  • Preheat oven to 350 degrees. In a large bowl, using an electric mixer, beat butter and sugar until smooth. Add egg, and beat until completely combined. With mixer on low, add flour, and mix just until incorporated.
  • Shape dough into 1-inch balls (about 2 tablespoons each). Place on baking sheets, at least 3 inches apart.
  • Moisten thumb with water, and gently press the center of each ball, making an indentation about 1/2 inch wide and inch deep. In microwave or on stove, heat jam until liquefied; spoon about 1/2 teaspoon into each indentation. Bake until cookies are golden brown around edges, 18 to 20 minutes. Transfer to a wire rack, and let cool completely. If storing, place in an airtight container at room temperature, up to 2 days.

This recipe comes from "Treasured Recipes Old and New 1975," a community cookbook by the Schuyler-Brown Homemakers Extension in Iowa Falls. It was contributed by Wilma Miller, who credits the recipe to her great-aunt. Steps:

  • Heat oven to 350 degrees. Line one or more baking sheets with parchment. Place flour in a bowl and whisk in the salt, cinnamon and cloves. Set aside.
  • Cream butter and brown sugar together by hand or in an electric mixer. Beat in eggs. The mixture will not be smooth. Dissolve the baking soda in 1 tablespoon hot water and stir it in. Stir in the dates and nuts. The batter will be heavy and not easy to mix. Work in the flour mixture, about a third at a time. If your electric mixer has a dough hook, use it for working in the flour.
  • Scoop heaping teaspoons of batter onto prepared baking sheet or sheets, making craggy mounds about 1 1/2 inches in diameter. Space them about 1 1/2 inches apart; the cookies will not spread very much. (Alternatively, for neater cookies, you can roll the batter into balls between your palms, then lightly press them down with the back of a spoon or the tines of a fork.) Allow to sit at room temperature 30 minutes to 1 hour before baking. Depending on the size of your oven and your baking sheets, you can form the cookies ready to bake on sheets of parchment paper on your countertop, then transfer them to baking sheets in shifts.
  • Bake 15 to 20 minutes, until nicely browned. Let cool, then dust with sifted confectioners' sugar. If you plan to freeze some of the cookies, do not dust them with confectioners' sugar; wait until after they thaw.
