ITALIAN SAUSAGE WITH BOW TIES

We often have our favorite pasta when company comes over, and I've shared this Italian sausage recipe several times. Now many of my friends make it for their families, too. -Janelle Moore, Auburn, Washington

Italian Sausage with Bow Ties image

Steps:

  • Cook pasta according to package directions. Drain., Meanwhile, in a 6-qt. stockpot, cook and crumble sausage with onion and pepper flakes over medium heat until no longer pink, 5-7 minutes. Add garlic; cook 1 minute. Drain., Stir in tomatoes, cream, salt and basil; bring to a boil over medium heat. Reduce heat; simmer, uncovered, until thickened, 6-8 minutes, stirring occasionally. Stir in pasta; heat through. Serve with cheese.

A friend gave this recipe to me a few years back, and my family can't seem to get enough of it. It sounds strange with cream in it, but that just enhances the flavor and texture. This is a very easy recipe.

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook pasta in boiling water for 8 to 10 minutes, or until al dente; drain.
  • Heat oil in a large, deep skillet over medium heat. Cook sausage and pepper flakes until sausage is evenly brown. Stir in onion and garlic, and cook until onion is tender. Stir in tomatoes, cream, and salt. Simmer until mixture thickens, 8 to 10 minutes.
  • Stir cooked pasta into sauce, and heat through. Sprinkle with parsley.

Italian Sausage with Farfalle and Broccoli Rabe image

Steps:

  • Bring a large pot of lightly salted water to a boil over high heat. Add the farfalle pasta, and cook until al dente, 8 to 10 minutes; drain.
  • Meanwhile, heat the olive oil in a large skillet over medium-high heat. Stir in the Italian sausage until crumbly and no longer pink, about 5 minutes. Stir in the garlic, and continue cooking until the sausage begins to brown, about 5 minutes more. Pour off the excess grease, then pour in the chicken broth and red pepper flakes. Bring to a boil over high heat, then add the broccoli rabe, and cover. Cook until the broccoli rabe is tender, about 4 minutes.
  • When the broccoli rabe is done, stir in the butter, Parmesan cheese, salt, and pepper until the meat sauce has thickened. Toss with the farfalle and serve.

Steps:

  • Pre-cook the sausage (Pan-fry,bake,etc.) cut into circles or semi-circles.
  • Chop garlic; put into a large measuring cup.
  • Chop basil and add to garlic.
  • Add a little salt and pepper before covering the garlic and basil with olive oil.
  • Put measuring cup in refrigertor.
  • Boil pasta, rinse and drain.
  • Toss with sausage and oil mixture.
  • Salt and pepper to taste.
  • If pasta is too dry, add more olive oil.
  • Stir in Parmesan Cheese and enjoy.

Steps:

  • Remove Italian sausage from casings; brown in a large heavy skillet, breaking Italian sausage up with spatula.
  • Remove browned Italian sausage to paper towels to drain.
  • Drain off all but about a tablespoon of the sausage drippings; sauté onions until soft; add minced garlic and sauté for another minute.
  • Drain tomatoes, reserving liquid. Cook tomatoes in the same skillet for about 4 minutes then add liquid.
  • Return Italian sausage to skillet with oregano, basil, salt and pepper. Simmer for about 20 minutes, stirring occasionally.
  • Cook pasta according to package instructions until done; drain and place on serving platter.
  • Spoon sauce over pasta and sprinkle with Parmesan cheese. Toss lightly and serve.
