My Breakfast Special Recipes
MY BREAKFAST SPECIAL
this is one of my man's favorite dishes, he asks for it often.

Number Of Ingredients 6
Steps:
- 1. In a large skillet, drizzle 1 to 2 tablespoons cooking oil or bacon drippings.
- 2. Over medium high heat, place potatoes and start frying. while potatoes are starting to cook, remove casing from brat and crumble meat into skillet.
- 3. add onions, peppers. continue cooking.turn heat down and place a lid over all and simmer until potatoes are tender. stir occassionally.
- 4. remove lid and crisp up potatoes.(turn heat up to med high) salt and pepper contents. move potato mixture to one side of skillet. place cheese slices over top.
- 5. on empty side of skillet, drop in eggs and cook to your preference.
- 6. to plate up, place potato mixture on bottom, top with your eggs and serve with hot buttered toast.
