MY FAVORITE RELISH

My wife made this delicious treat for me. She said she made it as a relish to add to my baked potatoes...but I tell you friends and neighbors.....it tasted so WONDERFUL... that I ate it by itself. You can use it as a relish for other things, but I prefer to eat it just as it is.

Steps:

  • Chop or dice the pepper, onion and tomato coarsely with your Handy Chopper Plus.
  • Add these ingredients together with the pimentos, pickle juice, and sugar.
  • You may add or delete the amounts according to your own taste.

I'm a huge fan of chicken salad and have tried so many different variations over the years, but this one is by far my favorite. Simple, refreshing flavors and great texture make it wonderful on a sandwich or just served over a bed of lettuce!

  • Stir chicken, celery, pecans, mayonnaise, yellow onion, relish, mustard, pepper, dill, lemon juice, sugar, salt, garlic powder, and paprika in a bowl until well combined. Refrigerate at least 1 hour before serving.
