Steps:
- Drain pineapple and reserve 3/4 juice. Bring to a boil; stir in rice. Simmer 2 minutes, remove from heat, cover and let steam 5 minutes. Prepare pudding mix according to package directions. Fold marshmallows into hot pudding, pecans and rice. Chill. Garnish with whipped cream. Six 1 cup servings.
MY HEAVENLY RICE
I make this for those special occassions and folks love it. I must say it goes quickly. I remember it at potlucks as a child and wishing my mother would make it. well my mother wasn't too adventurous with recipes at the time. This is my version of it. hope you make it and enjoy

- 1. combine rice and fruits and stir in cool whip
- 2. add nuts
- 3. store in covered container in fridge
- 4. sometimes I add a can of drained mandarin oranges if I have it. but is just as good without it. *NOTE use whatever type coolwhip you wish, they all work out well.

MY HEAVENLY RICE PUDDING
It has a wonderful custard base to it and it is oh so very easy to make. When my husband had it, he thought he died and went to heaven. It was so good I had to make a double batch!

Steps:
- Preheat oven to 325°F.
- Lightly grease a 9-inch baking dish.
- Mix all stuff together except for the cinnamon and nutmeg. Pour into baking dish and place in a pan of water about 1 inch deep.
- Bake for 1 1/2 hours, or until lightly browned and set.
- Combine cinnamon and nutmeg together and sift over the top of the pudding.
- Take pan from oven; let cool slightly and then cut into squares. Enjoy!

Steps:
- In a saucepan bring 2 cups water to a boil. Add rice and stir. Reduce heat, cover and simmer for 20 minutes.
- In a large bowl combine the cooked, cooled rice, sugar, pineapple and marshmallows. Fold in the whipped cream. Chill for 4 hours.
- Spoon the rice mixture into 6 dessert dishes and place a cherry on top of each.

- Combine the long grain and wild, brown, and long grain rice in a bowl, and set aside. Combine the diced onion, carrots, red bell pepper, Italian parsley, minced garlic, tomato paste, and honey, and set aside. In another bowl, combine the onion soup mix, garlic salt, seasoned salt, seasoned pepper, Turmeric, Paprika, brown sugar, and Italian seasoning, and mix well until all ingredients are blended. Add the combined spices to the rice and stir well.
- Add the diced vegetables to the rice and spices, and stir until all ingredients are well blended. Add the Rice mixture to the casserole dish, and add the chicken broth, cream of celery soup, and water, and stir gently to mix ingredients.
- Lay the chicken breasts on top of the Rice in the casserole dish. Spices will come up over chicken breasts. Place a Tablespoon of butter on the top of each chicken breast, and sprinkle salt and pepper on chicken.
