MOM'S HAMBURGER STEW
This is a hearty hamburger soup. I made beer bread to accompany it.

Steps:
- 1. Brown hamburger in stew pot and drain
- 2. add the beef broth, chopped onion, carrots, potatoes, and tomato paste.
- 3. Flavor to taste with salt, pepper and garlic powder.
- 4. Cook until potatoes are almost tender and add noodles. Soup is ready when noodles are cooked.
MOM'S HAMBURGER STROGANOFF
This was not served when I was a kid. I think Mom learned to make it when she decided she liked Hamburger Helper Stroganoff and she wanted to do it from scratch. Someone at church gave her this recipe and it is good and easy.

- 1. In a large skillet brown and crumble beef. Drain grease from pan. Add onion and cook until it is tender, stirring occasionally. Add remaining ingredients except sour cream and noodles and reduce heat to a simmer. Cook, stirring frequently, for about 20 minutes.
- 2. Meanwhile prepare noodles according to package directions. When beef mixture is ready stir in sour cream and heat thoroughly without boiling. Serve over noodles. Optional garnish: Sprinkle a bit of paprika over the dish before serving.
HAMBURGER STROGANOFF
Here is a savory take on an old fashioned recipe. I love beef Stroganoff, but my mom used to make this recipe using hamburger instead. It's not expensive to make, tastes great and can be a family favorite. It's hearty and heart warming, a real delight.

- 1. Brown hamburger in large skillet and drain fat. Add chopped up onion. Cook till onion is translucent. You can make additions if you like, depending on your tastes. I like to add mushrooms. If you do, add them at the same time you cook onions. Sometimes I add green onions as well. It all depends on you.
- 2. Add flour. Coat all of hamburger. Then add cream of mushroom soup, one can at a time. Sometimes mixture can be too thick, so I might add 1/2 cup milk, again, it's up to you.
- 3. Cook mixture until it is bubbling. Allow it to cook for 10 minutes. Keep on low to medium temperature. Cover if you like. When the food has bubbled, add sour cream. Turn off heat immediately. Do not allow heat to continue once you've added the sour cream. Serve with rice or noodles. Rice is best.

- Heat a skillet over medium-high heat. Add beef, mushrooms, onion, and garlic. Saute until beef is browned and crumbly, 6 to 8 minutes. Add flour; cook and stir until combined, about 2 minutes. Add broth, cream of mushroom soup, Worcestershire sauce, pepper, and salt. Bring to a boil; reduce heat. Simmer, stirring occasionally, until flavors blend, about 15 minutes.
- Fill a large pot with lightly salted water and bring to a rolling boil. Stir in egg noodles and return to a boil. Cook noodles uncovered, stirring occasionally, until tender yet firm to the bite, about 6 minutes. Drain.

- Add the ground beef, onion, and seasoning to a warm skillet over medium heat. Crumble the ground beef and stir often until cooked through. Drain off any excess grease if necessary.
- Add the beef broth and water. Bring the mixture to a boil. Put in the egg noodles and stir well. Return to a boil, reduce heat, cover and cook 8 - 12 minutes, or until the noodles are done to your liking. Stir every couple of minutes while the noodles cook.

- Melt butter in a large skillet over medium heat. Add mushrooms, onion and garlic to the skillet and sauté until tender (about 8-9 minutes). Remove from skillet and set aside on a plate.
- Next, brown the ground beef in the same skillet until no longer pink (about 7 minutes). If you’re not using extra lean ground beef, you may need to drain off some of the fat at this point. Add thyme, rosemary, 1 cup of the broth, salt and Worcestershire sauce. Bring to a boil, and then reduce heat to low. Cover and simmer over low heat for about 10 minutes.
- In a small bowl, whisk together remaining ½ cup of broth with the flour. Stir into beef mixture. Add onion mixture back to the skillet and bring to a boil, stirring constantly. - In a large nonstick skillet over medium high heat, add in the meat, onions, salt, pepper and Worcestershire sauce. Stir occasionally to break up the meat into small nickel-sized pieces. Cook until the meat is almost cooked through but still slightly pink, ~5 minutes. Drain excess grease.
- With the meat mixture still in the pan, add in the garlic and sliced mushrooms and cook until the mushrooms and meat are cooked through, ~5-6 minutes. Reduce the heat to medium and add in the cream cheese. Do not stir. Let it melt first. ~3-5 minutes.
