Steps:
- Heat oven to 425 degrees F. Melt butter in rectangular baking dish, 13x9x2 inches, in oven.
- Stir together Bisquick, paprika, salt and pepper; coat chicken. Place skin sides down in dish (dish and butter should be hot).
- Bake 35 minutes; turn chicken. Bake about 15 minutes longer or until juice is no longer pink when centers of thickest pieces are cut.

NANA'S SOUTHERN CHICKEN & DUMPLINGS

Steps:
- Boil 2-3 split chicken breasts in low-sodium chicken broth & water.
- While the chicken is boiling, lay out a large area of wax paper.
- Sift 3 cups of self-rising flour into a mixing bowl.
- Slowly pour 1 - 1/2 cups ice water into flour - roll into a dough ball. (If you have excess flour, use to coat wax paper.).
- Using a rolling pin, roll out dough to desired consistency. (I prefer thin dumplings, but you may create your dumplings in any consistency you like.).
- Cut rolled out dough with a knife or pizza cutter into small or medium squares.
- Check on your boiling chicken. Once the chicken breast separates, take the meat off the bone.
- Make sure broth is boiling and slowly place dumplings in with the chicken and broth. (Do not drop all dumplings in at once or they will stick together.).
- Season dumplings with salt and pepper to your liking. (I do not use salt since chicken broth is high in sodium, but lots of pepper really makes the dumplings taste good!).
- While the dumplings are finishing, prepare long-grain white rice using low-sodium chicken broth instead of water.
NANA'S CHICKEN IN THE OVEN
This is my husband's all time favorite recipe. It was passed down to me by my mother-in-law (and she originally got the recipe from her mother-in-law), so I am very proud to carry on this delicious family tradition! It's great to put in the oven before church, then when you get home Sunday lunch is already made!

- Preheat oven to 275 degress F. Place two slices of dried beef (or salami) on the bottom of a Pyrex baking dish for each piece of chicken (creating a bed for each breast to lay on). Place each chicken breast over their slices of dried beef. Lightly salt and pepper chicken breasts. Place 1 slice of bacon on top of each chicken breast, overlapping it to cover as much of the breast as possible. Mix together sour cream and cream of mushroom in a bowl. Spread mixture over all of the chicken breasts, completely covering them. Bake for 3 hours, uncovered.
- We eat ours over lightly buttered, white rice -- that way you can soak up all the sauce!
