This wonderful version of pimento cheese can be used for grilled cheese sandwiches, as a spread for crackers, or served alongside your favorite fried green tomatoes.

- Place the Cheddar cheese, cream cheese, mayonnaise, garlic powder, cayenne pepper, onion powder, minced jalapeno, and pimento into the large bowl of a mixer. Beat at medium speed, with paddle if possible, until thoroughly combined. Season to taste with salt and black pepper.

SPICY PIMENTO CHEESE SPREAD
Pimento cheese spread definitely qualifies as comfort food. Mine is an update with ingredients like good sharp Cheddar, pickled jalapeños, and Sriracha. This recipe is inspired by the pimento cheese from a Brooklyn cheese shop that I love called Stinky (what a great name!).

- In a large bowl, combine the cream cheese, mayonnaise, onion, garlic, celery seed, and 1/2 teaspoon salt with a wooden spoon. Add the jalapeños, scallions, red peppers, Cheddar, and Sriracha and combine well. Taste for seasonings and serve with crackers, corn chips, and/or crudités.
EASY PIMENTO CHEESE
Growing up Italian in New York, I only knew Pimento's as "that red thing inside a green olive". When I moved down south in 2002, I noticed most "true southerners" served pimento cheese spread alongside crackers at a party. I will admit some of them weren't so good (store brands) but then my boyfriends Mom served some, and it was love at first bite! Mine isn't as good as hers, but her recipe isn't written down, it's one of those "you use some of this and some of that, and when it looks too wet, it's done." I decided to experiment with several recipes and came up with this one, to tide me over between her little care packages she sends over to me and my daughter. It's a combination between Paula & Bobby Deen's recipes and a little of my own. Hope you enjoy as much as we do! So addicting.. I use a Kitchen Aid mixer, but you can mix by hand blender or Hand. I buy the preshredded cheeses to make the preparation go faster.

- In a large mixing bowl, place the cheddar cheese in an even layer. Scatter the cream cheese, pimentos, mayonnaise and chile flakes over the cheddar cheese. Using a spatula, mix the pimento cheese until it is smooth and spreadable, about 1 1/2 minutes.
- Transfer the pimento cheese to a plastic container or bowl, cover tightly, and store in the refrigerator. Pimento cheese keeps in the refrigerator for 1 week.

NANA'S PIMENTO CHEESE
Nana is DH's mother...and I can't get enough of her pimento cheese. The optionals are the stuff that I add when I want to dress her's up..but for the kids, just the way she makes it is wonderful. We serve it with ritz crackers and celery. We prefer to use the Vermont or Kraft brand of cheese. We like to eat it warm too cause it is more spreadable and who wants to wait till it's cool?

- In a large bowl, mix grated cheeses and whole bottle of pimentos and liquids. Mix gently. Add block of SOFTENED cream cheese, 1 TB of mayo and 1 TB HOT apple cider vinegar(this helps soften the mix farther for easier mixing). If you need more liquid, add more HOT apple cider vinegar.
- I use all the optionals at one time and I love it. Experiment and see how you like it.
- Serve on crackers and cleaned celery stalks topped with sliced green olive.
- Also, try wrapping a piece of melon (like cantelope) and a dollop of pimento cheese in a piece of ham. Yum!
