NANCYS-CREAMED APPLE PIE W/RED CINNAMON SYRUP

In the last two weeks ,I have baked apple bread, cake, dumplings, apple butter and apple crisps. .and... I still have apples left! All because my friend and I went to a WA. APPLE HARVEST FEST and purchased a bushel of apples that we divided between us. I was cooking like a squirrel harvesting nuts. Loving every minute of the baking! With the last of my apples, I was inspired to devise my own recipe for a delicious COOKED FRESH APPLES, CREAMED PIE ,and KISSED w/MY CINNAMON SYRUP using (Red Hots) I tweaked a few recipes and added my own ideas . NANCYS-CREAMED APPLE PIE w/RED CINNAMON SYRUP image

Steps:

  • Put red hots and 3/4 cup water in a sauce pan, bring to a boil, reduce heat, simmer 20-30 minutes to reduce liquid,... for making a syrup. Stir often.. Set pan aside....to cool to room temperature for later.
  • Wash ,peel, quarter, seed and slice apples. Put in a bowl ,cover with a little water, splashes of lemon juice to keep them from browning., while you slice more apples. Stir occasionally.
  • Drain apples. Put sliced apples in another pan with 1/2 cup sugar and 1/2 cup of water. Add a little of the red hots syrup. This will make the apples....blush, and taste good. Cook 10-15 minutes, untill apples are soft , but not mushy. Crimp the edges of your prepared pie crust and add the drained cooked blushing apples.
  • Pre-heat oven to 350. Beat the egg and milnut milk together. Add a little of the syrup ...and mix. Pour this over the apples in the pan. Do not stir. BAKE . For 30 minutes, till firm.
  • Set cooked pie aside to cool... Mmmmm! your kitchen will smell so good.
  • Cut and serve, with whipped cream and a little cinnamon syrup . Enjoy!!

Apple Pie with Cheddar Cheese Crust image

Steps:

  • For the pie crust: Combine the flour, sugar and salt in the bowl of the food processor and give it a quick pulse to blend the ingredients. Add the butter and pulse until the mixture looks like crumbly sand. Add the cheese and pulse again until combined and cheese is worked into the mixture and cut into small chunks. Turn the mixture out into a bowl, drizzle in 6 tablespoons cold water, and mix in with a rubber spatula until the flour is moistened. Add another tablespoon of water, only if needed. Divide the dough in half, shape each half into a ball and flatten to a disc. Rest the dough to relax the gluten, 30 minutes.
  • For the filling: Combine the Granny Smith apples, Braeburn apples, sugar, flour, light brown sugar, cinnamon and nutmeg in a large bowl and toss to combine.
  • Preheat the oven to 425 degrees F. Adjust the baking racks to the center of the oven.
  • Roll out 1 disc of the dough on a lightly floured surface to a 12-inch round. Transfer to a 9-inch pie dish. Add the apples in an even layer and dot with the butter. Lightly brush the edges with egg wash. Roll out the next dough round, slightly smaller than the first. Cover the top of the apples with the second pie dough, pressing the edges to seal the crust. Trim the crust so you are left with a 1-inch overhang. Tuck the crust underneath itself so it's flush with the edge of the pie plate. Crimp the edges decoratively. Brush the pie with the egg wash and sprinkle with the turbinado sugar. Make 5 air slits in the center of the pie. Place the pie on baking sheet and bake for 25 minutes.
  • Lower the oven temperature to 350 degrees F and bake for 45 minutes longer. Cool to room temperature, at least 3 hours, before slicing.

2 1/4 cups all-purpose flour, plus more for dusting
1 teaspoon sugar
1/4 teaspoon kosher salt
1 cup cold unsalted butter, cut into 1/2-inch pieces
1 cup (4 ounces) grated extra-sharp white Cheddar
2 pounds Granny Smith apples, peeled and sliced into 1/4-inch wedges
1 1/2 pounds Braeburn apples, peeled and sliced into 1/4-inch wedges
1/2 cup granulated sugar
1/4 cup all-purpose flour
1/4 cup packed light brown sugar
1/2 teaspoon ground cinnamon
1/4 teaspoon freshly grated nutmeg
2 tablespoons butter, sliced into pats
1 egg, beaten with 1 tablespoon water
1 tablespoon turbinado sugar, for sprinkling

CINNAMON APPLE SYRUP FROM PEEL

This is a yummy way to use up apple peels. I like to cook apples during the fall to freeze for a winter side dish. I always hated throwing away the peelings. I modified a recipe that I found online until I got a consistancy and flavor that I am happy with. I enjoy using tart apples like Cortland or Winesap. My whole family loves this syrup. It is especially tasty when poured over Cinnamon Pecan Pancakes :) I love to have this simmering on the stove, it makes the house smell wonderful!

Cinnamon Apple Syrup from Peel image

Steps:

  • Bring all four ingredients to a boil in a large stockpot. Stir until sugar dissolves.
  • Reduce heat to medium and simmer until peels lose their bright color. (Approximately 10 minutes.).
  • Remove apple peels with tongs or a slotted spoon.
  • Continue simmering until mixture has reduced by half. Test consistency by dipping a spoon into the mixture and then rubbing your finger across it. You will be able to tell when it has thickened. Cooking time will vary.
  • You may can this in sterile jars or let it cool and keep in the refrigerator.

Steps:

  • Line a 9-in. deep-dish pie plate or cast-iron skillet with crust; flute edges. In a large bowl, combine the sugar, cornstarch, cinnamon and allspice. Fold in the apples. Combine sour cream and vanilla; stir into apple mixture. Spoon into crust., For topping, combine the flour, brown sugar and cinnamon in a bowl; cut in butter until mixture resembles coarse crumbs. Sprinkle over filling., Bake at 400° for 25 minutes. Reduce heat to 350°; bake 25-30 minutes longer or until filling is bubbly and topping is golden. Cool on a wire rack. Refrigerate leftovers.

  • Place apples in pastry shell. Combine the sugar, flour and cream until smooth; pour over apples. Sprinkle with cinnamon. , Bake at 400° for 10 minutes.
