Neeps. Aka Rutabaga or swede image

Steps:

  • 1. Peel skin from Rutabaga cut into chunks they are very hard. Some cook before peeling but I prefer to peel with pesticides used these days
  • 2. Boil cut up rutabaga until easily pierced with fork. Drain ya don't want it hard.
  • 3. Place in bowl and take frustration out and mash mash mash. Add butter salt pepper to taste ... Done!

When we went over to Edinburgh for Hogmanay, our friends made this for us, along with a slice of haggis! This is a traditional Scottish side dish, and goes well with a beef roast or chicken. It is also a great way to use an often overlooked vegetable: the swede (aka the yellow turnip, the rutabaga, or the Swedish turnip).

Steps:

  • Place potatoes and swede in a large pot; cover with water. Bring to a boil. Cook until tender, about 15 minutes. Drain. Add butter and mustard powder; mash until well incorporated.
  • Stir scallions, salt, and pepper into the mash.

  • Put it all into a large saucepan and add enough cold water to just cover the swede. Add the salt and bring it to the boil, then reduce the heat, cover with the lid and simmer for 15 minutes or until the swede is soft and cooked through.
  • Drain, then pour the cooked swede back into the pan over a low heat and cook for 2 minutes, gently stirring so it doesn’t scorch, to evaporate some of the moisture from the veg.
  • Mash the swede either by hand or in a food processor (this will yield smoother results, though mashed swede will always be a bit chunky), along with the butter and nutmeg. Season with salt and pepper to taste.
