VELVEETA® Down-Home Macaroni and Cheese image

Steps:

  • Heat oven to 350 degrees F.
  • Melt 3 Tbsp. butter in medium saucepan on medium heat. Whisk in flour; cook 2 min., stirring constantly. Gradually stir in milk. Bring to boil; cook and stir 3 to 5 min. or until thickened. Add VELVEETA; cook 3 min. or until melted, stirring frequently. Stir in macaroni.
  • Spoon into 2-qt. casserole sprayed with cooking spray; sprinkle with Cheddar. Melt remaining butter; toss with cracker crumbs. Sprinkle over casserole.
  • Bake 20 min. or until heated through.

Delilah's Macaroni and Cheese image

Steps:

  • Preheat oven to 325°.
  • Bring a large sauce pan of salted water to a boil. Add the macaroni and cook until al dente (about 10 minutes); drain and set aside to keep warm.
  • Whisk the eggs in a large bowl until frothy. Combine the Velveeta, butter, and 2 cups of the half and half in a large bowl. Add the warm macaroni and toss until the cheese is melted and the mixture is smooth. Add the remaining half and half, 3 cups of the yellow cheddar, the remaining grated cheeses and the salt and pepper, tossing until completely combined.
  • Pour the mixture into a 9x13 inch casserole or baking dish and bake for 30 minutes. Sprinkle the remaining 1 cup of yellow cheddar cheese and bake until golden brown on top, about 30 minutes more. Serve hot.

2 cups of extra sharp white cheddar cheese
1 1/2 cups shredded mozzarella cheese
1 cup grated asiago cheese
1 cup grated gruyere cheese
1 cup grated monterey jack cheese
1 cup grated muenster cheese
1/8 teaspoon salt
1 tablespoon black pepper

This is an easy mac & cheese that my friend Nelda gave me. My boys love it and it can easily be doubled to take to church suppers, etc. I'm posting it here before I lose the piece of paper I copied it down on!

Steps:

  • Start cooking the macaroni.
  • In a medium saucepan on medium high heat, melt the butter, then whisk the flour in and, still stirring, let it cook for a few minutes until it starts to thicken. (You may have to turn down the heat a little to keep it from scorching.).
  • Start whisking the milk into the butter/flour mixture till combined.
  • Still whisking, add in the Velveeta and the sharp cheddar. Keep stirring until all the cheese has melted and the mixture is smooth. Remove from heat. Stir in salt and white pepper to taste. You can also add a few shakes of ground mustard if you like.
  • By this time the macaroni should be cooked. Drain the macaroni, put it in whatever dish you're using, then pour the cheese sauce over it and mix.
