NEW-AGE TABBOULEH SALAD
It's summer and it's hot. What I want...what I crave...is to eat something delicious, refreshing and healthy, and that's how this brown rice tabbouleh was born. It's the perfect salad to have with grilled anything, or to bring to a potluck. And you know you're being good to yourself in every way possible.

Steps:
- Combine all salad ingredients in a large, resealable bowl.
- Whisk together dressing ingredients, adding salt and pepper to taste. Toss salad with dressing. Taste salad (try to get a little of everything on your fork), add a little more lemon, if necessary. Adjust seasoning.
- Refrigerate at least 2-3 hours before serving to allow flavours to mingle and love each other. Mix salad well before serving to redistribute dressing. :-).

TABBOULEH
Steps:
- Place the bulghur in a large bowl, pour in the boiling water, and add the lemon juice, olive oil, and 1 1/2 teaspoons salt. Stir, then allow to stand at room temperature for about 1 hour.
- Add the scallions, mint, parsley, cucumber, tomatoes, 2 teaspoons salt, and the pepper; mix well. Season, to taste, and serve or cover and refrigerate. The flavor will improve if the tabbouleh sits for a few hours.
KALE TABBOULEH
Here's the thing about tabbouleh salad: Most of the ones I've had invert my preferred proportion of bulgur to parsley. What you usually get is a bowl of tabbouleh studded with bits of parsley. I like a salad that is mostly parsley, studded with grains of tabbouleh. I pictured a generous ratio of green to tan, but with kale standing in for parsley. It has a hint of parsley's pleasing bitterness, but is far milder, which means that this tabbouleh salad didn't have to be just a side dish, one best eaten in small portions. Instead, I could eat a whole bowl of it - a dream for a raw kale devotee.

- Cook bulgur according to package instructions. Cool.
- In a small bowl, whisk together lemon juice, shallot, cumin and salt. Whisk in olive oil.
- In a large bowl, toss together bulgur, kale, tomatoes, mint and radish. Toss in dressing. Season with black pepper and more salt if you like, and drizzle with additional oil if desired.

TABBOULEH SALAD
A great salad for potlucks. Substitutions can be made to the vegetables. While in Mexico I used cilantro instead of parsley and added poblanos and created a southwestern tabbouleh. Very refreshing!

Steps:
- Combine bulgur, boiling water, and salt in a bowl.
- Cover and let stand 15-20 minutes, or until bulgur is chewable.
- Add lemon juice, garlic, oil, and mint, and mix thoroughly.
- Refrigerate 2-3 hours.
- Just before serving add the vegetables and mix gently.
- Correct seasonings.
- Garnish with olives.

LEBANESE TABBOULEH
We think of tabbouleh as a bulgur salad with lots of parsley and mint. But real Lebanese tabbouleh is a lemony herb salad with a little bit of fine bulgur, an edible garden that you can scoop up with romaine lettuce heart leaves or simply eat with a fork.

- Place the bulgur in a bowl, and cover with water by 1/2 inch. Soak for 20 minutes, until slightly softened. Drain through a cheesecloth-lined strainer, and press the bulgur against the strainer to squeeze out excess water. Transfer to a large bowl, and toss with the garlic, lemon juice, parsley, mint, tomatoes, scallions and salt. Leave at room temperature or in the refrigerator for two to three hours, so that the bulgur can continue to absorb liquid and swell.
- Add the olive oil, toss together, taste and adjust seasonings. Serve with lettuce leaves.

- Wash the bulgur wheat and let the water run clear, then let it soak in the lemon juice for at least 5 minutes, but it's preferred if you leave it for longer until the salad is ready and you can mix in the bulgur. It should double in size and before quite soft.
- Chop the parsley and mint leaves finely. I usually remove most the stems especially if they're hard, and work with the leaves. Don't skip the mint leaves, as they add a lot of flavour and give that lovely freshness to your salad.
