SCRAMBLED EGGS WITH CHEDDAR CHEESE AND ONIONS

- In a medium bowl, whisk together the eggs and milk and season with salt and pepper.
- Melt the butter in a medium non-stick skillet over medium heat. Add the onion and cook, stirring, until golden, about 5 minutes. Add the egg mixture and cook, stirring, until loosely set, about 3 minutes. Sprinkle the cheese over the eggs and stir to combine. Continue to cook, stirring, for 2 to 4 minutes depending on desired firmness of the eggs. Serve immediately.

NITKO'S SCRAMBLED EGGS WITH ONION AND BACON
This is one of my favorite egg meals. I do not remember when I have started eating this meal, but I am sure I was very young. It can be nice lunch, heavy breakfast or even supper. It is even better if you use spring onion. This meal has Dalmatian flavor (herbs, olive oil) but you can do it without this ingredients.

- Scramble eggs with sour cream in a separate bowl. Add salt, pepper and oregano.
- Cut onion into thin rings. Cut bacon into small cubes.
- Take a Teflon pan; put olive oil and sauté onion rings until soft (it can even get little brown). Add bacon and sauté some more (1-2 minutes).
- Pour eggs, stir and fry until hardens. Serve hot.

- Cook bacon in a large nonstick skillet over medium-high heat until fat begins to render, about 2 minutes. Add 3 tablespoons oil, potatoes, onion, chard stems, and rosemary; season with salt. Cook until potatoes are tender and browned in places, 13 to 15 minutes. Stir in chard leaves and garlic, season with pepper, and cook, stirring a few times, until leaves are tender, about 3 minutes. Transfer to a serving dish; loosely cover to keep warm.
- Add remaining 1 tablespoon oil to skillet and place over medium heat. When oil shimmers, add eggs, season with salt, and cook, stirring frequently, until just set, about 1 minute. Serve with potato mixture and salsa.
BAKED EGGS WITH ONIONS AND CHEESE
Eggs can be baked on a bed of almost anything -- cooked spinach and sliced tomatoes come to mind immediately -- but the trick in every case is to avoid overcooking. The consistency of baked eggs should be like that of fried eggs, with a barely cooked white and a soft, runny yolk.

- Preheat oven to 450 degrees. Put butter or oil in large, ovenproof skillet, and set over medium-high heat. Add onions and a liberal sprinkling of salt and pepper, cover skillet and turn heat to medium. Cook, stirring occasionally, until onions are very soft and tender but not browned, for about 15 minutes.
- Combine bread crumbs and cheeses, and sprinkle half of this mixture over onions. Use back of spoon to make 8 little nests in the mixture, and crack 1 egg into each. Season with salt and pepper, and distribute remaining bread crumbs and cheese mixture over top.
- Bake for 5 minutes, or until eggs are barely set. Turn on broiler, and run skillet under it to brown top for a minute or so, being careful not to overcook the eggs. Serve hot or at room temperature.

- Cook bacon according to directions on package. Once cooked cut the bacon up into 1/2 inch pieces.
- Crack open eggs in small bowl. Add milk, salt, dash of pepper and bacon into bowl. Mix together until eggs are beaten.

- To begin with, I chopped the two onions, but not very small, I like to feel the taste of fried onions. It can also cut julienne if someone wants it.
- I broke the four eggs in a bowl and seasoned with salt and freshly ground pepper.We beat the eggs well with an egg beater or a fork until it is homogenized. After that, I put a spoon of sour cream, and I beat on until the sour cream was incorporated into the eggs. In the end, we smash a piece of cheese, which I mix in the eggs, slowly this time.
- In a non-stick frying pan, I warmed a tablespoon of sunflower oil, and put the bacon to fry. I fry the bacon 2-3 minutes, then I add the onion to the pan. I fried everything for another 3-4 minutes until the onion soaked, then I added the eggs.
- For added flavor, I also put a teaspoon of sweet paprika. I fried the eggs 3-4 minutes, stirring constantly, until the eggs reach the desired consistency. If you like soft scrambled eggs, you can fry them less.
