NO-KNEAD PUMPKIN CINNAMON ROLLS

My cousin gave this recipe to my mother many years ago. My mother shared it with me, and I have been making it ever since. The rolls are so amazingly moist and tender, especially right out of the oven. -Kathleen Gill, Miles City, Montana

No-Knead Pumpkin Cinnamon Rolls image

Steps:

  • Dissolve yeast in warm water. In a large bowl, combine pumpkin, egg, butter, sugar, salt, pie spice, yeast mixture and 1 cup flour; beat on medium speed 3 minutes until smooth. Stir in enough remaining flour to form a soft dough (dough will be sticky)., Do not knead. Place in a greased bowl, turning once to grease the top. Cover and let rise in a warm place until doubled, about 1 hour., For filling, mix brown sugar and cinnamon. Stir down dough, beating about 25 times; turn dough onto a well-floured surface (dough will be sticky). Roll into a 12x10-in. rectangle. Brush with melted butter to within 1/2 in. of edges; sprinkle with brown sugar mixture. Roll up jelly-roll style, starting with a long side; pinch seam to seal. Cut into 12 slices., Place in a greased 9-in. round pan, cut side down. Cover; let rise in a warm place until doubled, about 45 minutes. Preheat oven to 375°., Bake until golden brown, 20-25 minutes. Place on a wire rack to cool slightly. Mix frosting ingredients; spread over warm rolls.

2/3 cup warm water (110° to 115°)
1/2 cup canned pumpkin
1 large egg
1/4 cup butter, softened
1/4 cup sugar
1 teaspoon salt
1/2 teaspoon pumpkin pie spice
2-1/2 to 2-3/4 cups all-purpose flour
FILLING:
1/2 cup packed brown sugar
1 teaspoon ground cinnamon
2 tablespoons butter, melted
FROSTING:
1-1/4 cups confectioners' sugar
2 to 3 tablespoons 2% milk
1/8 teaspoon pumpkin pie spice

NO-KNEAD CINNAMON ROLLS

These are gobbled up as soon as family sees them. I'll never try another cinnamon roll recipe, because I think these are the best. Note: These are wonderful fresh, but they don't freeze well.

No-Knead Cinnamon Rolls image

Steps:

  • In saucepan, heat 1/2 cup milk, water, and 2 tablespoons butter until very warm. Place milk mixture, salt, flour, yeast, sugar, and eggs in the pan of the bread machine in the order suggested by the manufacturer. Select the Dough cycle. Press Start.
  • Once Dough cycle is complete, remove the dough from the bread machine and punch down. On a floured surface, roll into a large rectangle. Smear with the softened butter. Combine the cinnamon and 1/3 cup sugar. Sprinkle over the rectangle. Generously sprinkle the raisins and/or chopped nuts over the top.
  • Roll the dough up into a log starting at the long side. Cut into 12 slices. Place the rolls cut side down into a 9x13-inch greased baking pan. Cover, and let rise in a warm place until almost doubled, about 30 minutes.
  • Preheat an oven to 375 degrees F (190 degrees C). Combine the confectioners' sugar, 1.5 tablespoons melted butter, vanilla extract, and 1.5 tablespoons milk into a thick frosting; set aside.
  • Bake rolls in preheated oven until golden, 20 to 25 minutes. Remove and allow to cool 10 minutes. Spread frosting over baked rolls and enjoy.

  • Warm milk to around 110 degrees F. I like to do this by placing milk in a microwave safe bowl and microwaving it for 45 seconds. It should be like warm bath water. Transfer warm milk and sugar to the bowl of an electric mixer and sprinkle yeast on top. Stir pumpkin puree, room temperature egg and melted butter, mixing until smooth and well combined and creamy. Next stir in bread flour, pumpkin pie spice and salt with a wooden spoon until a dough begins to form.
  • Place dough hook on mixer and knead dough on low speed for 8-10 minutes. Dough should form into a nice ball and be slightly sticky. (If you don’t want to use an electric mixer, you can use your hands to knead the dough for 8-10 minutes on a well-floured surface.)
  • Transfer dough ball to a large bowl greased with olive oil or nonstick cooking spray, then cover with plastic wrap and a warm towel. Allow dough to rise for 1 hour or until doubled in size. This may more or less time depending the humidity and temperature in your home.
  • After dough has doubled in size, transfer dough to a well-floured surface and roll out into a 14x16 inch rectangle. Spread softened butter over dough, leaving a ¼ inch margin at the far side of the dough.

  • Make the dough: Combine flour, yeast, pumpkin spice and salt in a large bowl. Whisk milk, melted butter, canned pumpkin and sugar in a large measuring jug until smooth. Pour into the flour mix and stir until you have a scraggly dough. Cover with a clean dish towel and rest at room temperature until puffy and roughly doubled in size (time depends on room temperature and altitude - usually it's around 1-2 hours).
  • Roll out dough: Once dough is ready, line a baking sheet and sprinkle generously with flour (if you don't use enough flour, the dough will stick to the lined sheet, so do be generous - you may need up to 1/2 cup). Drop the dough on it and sprinkle the top of the dough with flour, too. Using your fingers, press the dough into a rectangle the size of the baking sheet.

  • Rest and bake: Cover the rolls in the dish with a clean dish towel and rest for around 30 minutes, or until puffy and touching each other. Preheat the oven to 360°F. Brush the rolls with melted butter, then bake for around 20 minutes, or until lightly browned and cooked through.
