DELLA NONNA SAUCE

- 1. Bring a large pot of salted water to a boil. Add peas and cook until bright green and tender, about 7 to 8 minutes. Remove the peas with a slotted spoon or strainer and set aside. Use the same water to cook pasta according to package directions. Drain, reserving 1/4 cup of the pasta water.
- 2. Meanwhile, in a large skillet heat butter over medium heat. Add the prosciutto or pancetta and cook until golden and crispy, about 5 to 6 minutes. Add the shallot and thyme and cook until slightly softened, but not brown, about 1 minute. Increase the heat to medium-high and add the wine. Let the wine evaporate slightly and then add the heavy cream. Cook until the sauce reduces and thickens slightly, stirring occasionally, about 6 to 7 minutes. Season with salt and pepper. Just before serving, stir the cheese, parsley, and peas into the sauce until it thickens a little more.
- 3. Toss the pasta in the sauce and use the reserved pasta water, if needed, to loosen the sauce slightly. Transfer the pasta to serving bowls and garnish with additional cheese and parsley, if desired.
NONNA'S PASTA SAUCE
This is my nonna's old standby, when I was growing up, I would live for the weekends that we went to visit her, cause she'd make this everytime...It isnt loaded with ingrediants, and thats what makes it so good. Simple, fresh Italian flavours. It will nver taste the same as hers but its close enough for me!

- Pre-heat oven to 350°F.
- Put meat on a baking tray and bake, until juices run clear, about 20 minutes Process the carrot and onion together in a food processor, till smooth.
- Fry garlic in oil in a large saucepan, add the carrot and onion and bay leaf, fry for 5 minutes.
- Add tomatoes and wine, bring to a boil.
- Lower heat to simmer and add the cooked meat, leaving whole.
- Add spices.
- Let simmer 2hrs on low.
- Serve over pasta.
- Top with freshly grated Parm cheese. When the sauce is ready to serve take the meat out and put on a serving dish and pass with the sauce.......the meat will be melt in your mouth good!!

FAMILY FAVORITE PASTA SAUCE FOR TWO
Steps:
- In a large saucepan, cook the sausage, onion and garlic in oil over medium heat until meat is no longer pink; drain. , Stir in the tomatoes, tomato paste, water, parsley, brown sugar, vinegar and seasonings. Bring to a boil. Reduce heat; simmer, uncovered, for 45 minutes or until flavors are blended. Serve with pasta.

WONTON SOUP FOR TWO
The recipe I modified to make this version (from Favorite Brand Name Soup) called for making the wontons 12 at a time. I liked the idea of making more ahead of time so I can throw the soup ingredients together in a jiffy and the wontons are already made. My husband brags about this soup and asks me to make it special for him. This soup for two is so easy and delicious, you'll be craving it yourself!

Steps:
- Combine ground pork, water chestnuts, soy sauce, egg whites, ginger, and garlic for wontons in a bowl.
- Place 1 wonton wrapper on a work surface with a point facing you so it looks like a diamond. Dip your finger in water and lightly moisten the bottom 2 edges of the wonton wrapper. Place 1 teaspoon of meat filling near the point closest to you. Pull the further corner over the meat to the corner nearest to you and seal the point. Gently squeeze the air out of the wonton with both hands while sealing the edges. Set the finished wonton on dry parchment paper. Repeat until the meat filling or the wontons are gone.
- Combine chicken broth and soy sauce for soup in a saucepan and bring to a boil. Reduce heat to medium; add 12 wontons, stirring gently so the wontons don't stick to each other, and cook for 4 minutes. Stir in kale and green onions and cook until heated through, 3 to 5 minutes. Remove pan from heat and stir in sesame oil and carrot. Ladle into two bowls and serve.

- Removed casing from sausage links and cut into 1/2 inch slices. In a large skillet, brown sausage over medium heat for about 10 minutes; remove and set aside.
- In a large skillet, heat ground beef, olive oil, garlic and onion over medium heat until meat is nicely browned; drain.
- Pour in tomatoes and tomato sauce; mix in salt, ground black pepper, basil, oregano, bay leaf and cooked sausage. Simmer uncovered for 1 hour, stirring occasionally.

- Bring a large pot of lightly salted water to a boil. Cook pasta in the boiling water, stirring occasionally until tender yet firm to the bite, about 12 minutes.
- Meanwhile, heat olive oil in a skillet and saute shallot until soft and translucent, 3 to 5 minutes. Add olives, chopped tomatoes, and capers. Mix well and remove from heat.
