NOODLES WITH BROCCOLI

I found a recipe for a noodle and broccoli side dish, then changed it to use what I had on hand and to make it faster. Wow, it is good!-Janene Christensen, Eureka, Missouri

Steps:

  • In a large saucepan, bring broth to a boil; add pasta and broccoli. Cook, uncovered, for 5-6 minutes or until tender; drain. , In a large skillet, saute the pasta, broccoli, 1/4 cup cheese, salt and garlic powder in butter and oil; toss to coat. Sprinkle with remaining cheese.

  • Prepare the broccoli rabe by rinsing it well and patting it dry. Slice off the tough lower ends of the stems and discard. Slice off any remaining stems that are over 1/4-inch in diameter and discard those as well, since they will be too fibrous even after cooking.
  • Next, prepare the peanut sauce. In a 2-cup liquid measuring cup, whisk together the ingredients until well blended. Set aside.
  • Bring a large pot of salted water to boil. Meanwhile, warm 2 tablespoons olive oil in a large skillet over medium heat. Add the broccoli rabe and season with a dash of salt and a small pinch of red pepper flakes. Toss to combine and continue cooking, stirring occasionally, until the leaves have wilted and the stems are easily pierced by a fork, about 8 minutes. Remove from heat.
  • Once the water is boiling, add the soba noodles and cook just until al dente, about 5 minutes. Drain the noodles, then return them to the pot, add the broccoli rabe and toss with peanut sauce (you might not quite need all of it) until blended.

  • Place the rice noodles in a pan or large bowl, then pour over enough boiling water to fully submerge them. Stir every minute or so until they are tender and easy to bite through, which can be anywhere from a couple of minutes to 10 minutes depending on the thickness. Drain and set aside (see notes). For other noodle types, prepare according to package instructions.
  • Meanwhile, in a jug or bowl, combine the peanut butter, tamari/soy sauce, agave syrup, lime juice, sesame oil, garlic, and water. Mix thoroughly until smooth.
  • In the same bowl or a pan, toss the rice noodles in the peanut butter sauce until evenly coated. Mix in the sliced spring onions and serve (see notes for serving suggestions).

  • In your largest skillet (I used a 12-inch cast iron), warm oil over medium heat. Once hot, add broccoli and carrot. Cook, stirring often, for 8-10 minutes, or until softened and browned.
  • Meanwhile, place peanut sauce ingredients in a medium bowl. Whisk until smooth. It will taste salty, but it will get diluted in the pasta.
  • Once veggies are cooked, remove pan from heat. Add noodles to pan followed by peanut sauce. Use tongs to toss everything together. (If your pan was on the smaller side, you can transfer everything to a large bowl so you can mix it together easily). Top with plenty of cilantro, green onions and peanuts, lightly tossing to coat. Serve immediately, as the pasta will absorb the sauce as it sits. I like to top mine with extra sriracha!
