HENRY CLAY'S SOUTHERN MINT JULEP

In an age devoted to convenience and speed, the julep throws up some major hurdles. Although it contains only three ingredients -- sugar, bourbon and mint -- it requires time and patience to make. The drink requires large quantities of crushed ice. To lay the foundation for the drink, it is first necessary to muddle the sugar with a little bourbon and a few mint leaves. It should be served with two straws and garnished with a nice bush of mint, sprinkled with a little powdered sugar, please. And of course, you'll want to serve your juleps in a silver or pewter mug.

  • Fill the glass halfway with cracked ice, and agitate with a spoon.
  • Pack the rest of the glass with ice and fill with the rest of the bourbon and equal parts fresh water and carbonated water.

Steps:

  • In large casserole over medium-high heat, heat olive oil and add onion, bacon, bay leaves, sage, rosemary and cloves. Saute, stirring constantly, until onion is wilted, about 4 minutes.
  • Season rabbit pieces with salt and pepper to taste. Add rabbit to casserole, and saute until lightly browned, about 3 minutes a side. Add tomato paste and wine. Stir, scraping bottom of pan. Add stock. Simmer partly covered until rabbit is cooked, about 40 minutes.
  • Remove rabbit pieces to a platter, and keep them warm. Strain sauce, and return it to a clean pan. Bring it to a boil, and reduce for 5 minutes. Adjust seasonings. Pour sauce over rabbit, and serve with polenta.

  • Pour vodka in a shallow bowl. Tear off small pieces of the gold leaf with tweezers, avoiding squeezing or folding it (thick pieces will sink). Float the pieces on the vodka.
  • Combine the rest of the ingredients (except gold leaf, vodka and Champagne) in an iced metal shaker. Shake vigorously and pour into a trumpet flute, filling 3/4 of the way. Top with Champagne.
  • Pour in the vodka, letting the gold slide onto the surface.

13 BEST TEA RECIPES - THE SPRUCE EATS

From thespruceeats.com

  • Sage Herbal Tea. Just breathing in the aroma of this simple sage tea may help you feel more relaxed, but wait until you sip it. Steeping sage leaves in boiling water will give you a basic sage brew, but adding a bit of sugar and lemon levels up the flavor.
  • Matcha Latte. You've probably ordered your fair share of matcha lattes at your favorite local coffee shop. But did you know that they're super easy to make at home?
  • Hong Kong Iced Tea. Use either sweetened condensed milk or evaporated milk for this decadent, full-bodied milk tea that originates in Hong Kong. The strength of the tea will depend on how long you brew your black tea leaves, so let it go longer for a more assertive flavor or for less time if you prefer a milder brew.
  • Thai Iced Tea. Lots of Thai iced teas get their flavor from a prepared syrup or powder, but this one uses real spices and high-quality black tea to give it that authentic flavor.
  • Masala Chai Tea. Masala Chai, or mixed-spice tea, originates in India and uses a blend of spices, black tea leaves, and milk to give it a warming, comforting flavor.

  • Sweet Lemon Iced Tea. Sweet iced tea with lemon is a southern staple, but it’s also gained popularity in other areas of the U.S. over the last several decades.
  • Iced Green Tea with Mint and Honey. This 12-minute, 6-ingredient tea is another refreshing option for the warmer days of the year. Green tea is always a fresh, light drink, but it becomes pretty unbeatable when you add honey, mint, and lemon slices.
  • Raspberry Lemon Iced Tea. Of all the fruit-infused teas, raspberry lemon is probably my favorite. The raspberry simple syrup is easy to make. All you’ll need is raspberries, sugar, and water.
  • Ginger Cardamom Chai. If spicy, herby tea is more your style, you’ll love ginger cardamom chai. You’ll infuse the base of loose black tea with grated ginger, sugar, and cardamom to get that excellent chai taste.
  • Sweet Peach Iced Tea. If Georgia’s on your mind, this sweet peach tea will help transport you there in only the 10 minutes it takes to make it. It starts just like southern-style sweet tea, with black tea, water, sugar, and baking soda.
