TURKEY AND SWEET POTATO HASH

Steps:
- Preheat the oven to 400 degrees F.
- For the Hash: Mash 1 cup of the sweet potatoes in a large bowl. Then stir in the turkey, chicken broth, cilantro, chipotles in adobo, garlic, egg white, 1/4 cup of the cheese, the remaining 1/2 cup chopped sweet potatoes, 2 teaspoons of salt and a few grinds of pepper.
- Heat 2 tablespoons of the butter and 1/2 teaspoon of the coriander in an ovenproof 10-inch nonstick skillet over medium heat. Add the potato mixture and spread it evenly in the skillet, pressing lightly to form a solid cake. Cook, shaking the skillet occasionally, until the bottom is set, about 3 minutes.
- Put a large plate over the skillet and invert so the hash falls onto the plate. Return the skillet to the heat and melt the remaining 1 tablespoon butter with the remaining 12 teaspoon coriander. Slide the hash back into the skillet cooked side up (if it breaks apart, simply reshape it into a solid cake). Cook, shaking the skillet occasionally, for 2 minutes.
- Transfer the skillet to the oven and bake the hash until firm, about 10 minutes. Carefully invert or slide the hash onto a serving plate and scatter the remaining 14 cup cheese, the cilantro leaves, and the scallion over the top.
- Serve with Chipotle Cranberry Sauce (See Below) if using.
- For Cranberry Sauce: Whisk together the cranberry sauce, chiles, lime juice and lime zest in a small bowl. Season with salt and pepper.

POACHED EGGS WITH HERB-ROASTED TURKEY BREAST AND SWEET POTATO HASH

- In a large nonstick frying pan, heat the oil over moderately high heat. Add the onion and thyme and cook, stirring, until softened and beginning to brown, 3 to 5 minutes. Add the sweet potatoes, turkey, salt and some pepper and cook, stirring occasionally, until the potatoes are beginning to brown, about 3 minutes longer. Add the broth, scraping up any brown bits that may have formed on bottom of pan. Keep warm while poaching the eggs.
- Fill a saute pan with 1 1/2 inches of water and the vinegar and bring to a simmer. Break 1 egg into a small bowl and then carefully pour it into the water. Repeat with the remaining eggs spacing them so they do not touch. Poach at a gentle simmer until the whites are firm but the yolks are still runny, 3 to 4 minutes. With a slotted spoon, transfer the eggs to paper towels and season with salt and pepper.
- Divide the hash between 4 plates and top each serving with a poached egg. Serve with hot sauce.

SWEET POTATO AND CARAMELIZED ONION HASH WITH BAKED EGGS

- Preheat oven to 450°. Line a large baking sheet with foil or parchment paper.
- Melt butter in a cast-iron or other heavy skillet over medium-high heat. When it foams, add onions and sprinkle lightly with salt and pepper. (Don't worry if they are crammed into the pan; they will rapidly cook down.) Lower heat slightly and cook, stirring occasionally (reduce heat further if they seem to be burning), until dark brown, about 20-30 minutes.
- Meanwhile, toss sweet potatoes, oil, 1 1/2 tsp salt, smoked paprika, a generous helping of black pepper, and minced rosemary or oregano in a large bowl. Stir in onions.
- Spread sweet potato mixture on prepared baking sheet and roast for 25-40 minutes, stirring every 10-15 minutes, until sweet potatoes are soft and browned.
- Reduce oven temperature to 425°. Spread a relatively thin layer of the cooked sweet potato hash in individual ramekins, a cast-iron skillet, or a 9" x 13" baking dish.
- Make small wells in the hash and crack in the eggs. Sprinkle lightly with salt and pepper. Bake for 10-20 minutes, or until hash is hot and eggs are baked to your preference. Test the eggs by prodding them with a fork to check the firmness of the white and the runniness of the yolk.
- Serve immediately, with Parmesan, if desired.

- Melt butter in a large, deep skillet over medium heat. Add onion; cook 5 minutes, stirring occasionally. Stir in turkey, rosemary and paprika; cook 2 minutes.
- Stir in sweet potatoes and corn; cook until vegetables are heated through, about 5 minutes, stirring once.
- With a large spatula, press the hash into an even layer. With the back of a spoon, press four 1-inch deep wells into the sweet potato mixture. Crack an egg into each well and season with salt and pepper, if desired. Cover skillet and cook until eggs are set, about 5 minutes for soft-set. Garnish with green onions, if desired.

As the daughter of a daughter of North Carolina, I was delighted to come across this recipe on the North Carolina Sweet Potato Commission website. (Mom never made it, but she would have, if the internet had been around before she passed - this was her kind of dish.) Not only is this dish relatively easy and good comfort food, it's a nice way to use up leftover turkey if you have it. * This is the recipe, as written. I have to double it for my family, and leave out the bell pepper as hubby doesn't like it. *

- Place sweet potatoes in a saucepan; add enough water to cover by 1 inch.
- Bring to a boil and cook 3 to 4 minutes, until potatoes are just barely tender. Drain well and set aside.
- Heat butter and 1 tablespoon oil in a large skillet over medium-high heat.
- Add onion and red pepper and cook about 4 to 5 minutes until lightly brown.
- Add sweet potatoes. Cook, stirring 6 to 7 minutes, until sweet potatoes are crispy.
- Add remaining oil and turkey; season with salt and pepper and cook for 1 to 2 minutes.
- Make 4 holes (3-inches each) in hash and break an egg into each hole.
- Reduce heat to low, cover and cook 4 to 5 minutes until eggs are cooked to desired degree of doneness.
- Sprinkle with chives, parsley and additional salt and pepper if desired. Serve immediately.

- To prepare the sweet potatoes, slice them crosswise into 1/4" circles. Then, cut each circle into 1/4" strips (you should have 3-4 strips/circle). Cut each strip into 1/4" cubes and set aside until ready to use.
