OLD-FASHIONED OATMEAL COOKIES

Old-Fashioned Oatmeal Cookies are from Michelle Wise of Spring Mills, Pennsylvania. "They're my favorite cookies to take on a trip my favorite cookies to take on a trip because they stay moist and aren't too sweet," Michelle informs. "My mother passes the recipe on to me."

Steps:

  • In a saucepan, cook raisins in water over medium heat until plump, about 15 minutes. Drain, reserving liquid. Add enough water to liquid to measure 1/2 cup. In a bowl, cream shortening, sugar, eggs and vanilla. Stir in raisin liquid. Blend in dry ingredients. Stir in raisins and oats. Add nuts if desired. , Drop by teaspoonfuls about 2 in. apart onto ungreased baking sheets. Bake at 375° for 10 to 12 minutes or until light brown.

SOFT OATMEAL COOKIES

These oatmeal cookies are very moist with a good flavor. Add a cup of raisins or nuts if you desire.

Steps:

  • In a medium bowl, cream together butter, white sugar, and brown sugar. Beat in eggs one at a time, then stir in vanilla. Combine flour, baking soda, salt, and cinnamon; stir into the creamed mixture. Mix in oats. Cover, and chill dough for at least one hour.
  • Preheat the oven to 375 degrees F (190 degrees C). Grease cookie sheets. Roll the dough into walnut sized balls, and place 2 inches apart on cookie sheets. Flatten each cookie with a large fork dipped in sugar.
  • Bake for 8 to 10 minutes in preheated oven. Allow cookies to cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely.

It all started with your basic hand me down oatmeal cookie recipe and I wanted something special I'd been working to create the perfect oatmeal cookie recipe for several months when I hit on this combination of ingredients. (I get away with thinking of them as a healthy snack with the Whole wheat flour, applesause and raisins.) Everyone who has ever eaten one is instantly addicted and they have been requested more times than I can count by friends and family. They are a huge hit at Bake sales as well.

Not Your Mothers Oatmeal Cookies image

Steps:

  • Heat the oven to 350 deg.
  • Line a large cookie sheet with parchment paper (do not use foil or greased cookie sheet as these will stick).
  • Combine your flour, baking soda and oatmeal in a separate bowl and set aside.
  • In a large bowl place your butter and applesauce give it a bit of a mix.
  • Next add your sugar, salt, vanilla eggs and molasses and stir together with a spoon till well combined.
  • Add in the Flour mixture and mix by hand till it appears creamy.
  • fold in the raisins, heath bits and the chocolate chips till they are worked throughout the dough.
  • Using an ice cream scoop or a large spoon drop cookies onto the parchment covered baking sheet. Flatten the tops just a bit to make cooking even (they spread but not a lot).
  • Bake at 350 deg for approx 15 -20 minutes, Actually I've never timed this I just watch the cookies and when they no longer have a 'gooey' look to the centers I remove them.
  • Gently remove them while still warm from the cookie sheet with a spatula, the cookies will firm up as they sit but need a gentle handling when warm.

Classic Oatmeal-Raisin Cookies image

Steps:

  • Heat oven to 350 degrees. Butter two large cookie sheets, or line them with parchment paper or reusable silicone liners.
  • Using an electric mixer, beat butter in a large bowl until creamy. Add brown and granulated sugars, then beat until fluffy, about 2 minutes. Beat in eggs, one at a time, until fully incorporated. Then, beat in vanilla extract.
  • In a separate bowl, use a wooden spoon or spatula to mix together the flour, salt, baking soda, cinnamon, nutmeg and cardamom. Set mixer on low speed, and beat flour mixture into the butter mixture. Stir in oats and raisins.
  • Spoon out dough by large tablespoonfuls onto prepared cookie sheets, leaving at least 2 inches between each cookie.
  • Bake until cookie edges turn golden brown, about 9 to 13 minutes. Centers will still be quite soft, but they will firm up as the cookies cool. Cool completely on a wire rack. Store in an airtight container at room temperature.
