CARAMEL NUT TART

My mom loves caramel, nuts and cream cheese, so when I found this tart recipe I knew I had to try it. Now the dessert is a family favorite and it is served at every get-together. -Donna Urban, Glenolden, Pennsylvania

Caramel Nut Tart image

Steps:

  • In a small bowl, combine flour and salt; cut in cream cheese and butter until mixture resembles coarse crumbs. Gradually add water, tossing with a fork until dough forms a ball. , Roll out dough into a 10-in. circle. Press onto the bottom and up the sides of an ungreased 9-in. fluted tart pan with a removable bottom; trim edges., Line unpricked crust with a double layer of heavy-duty foil. Bake at 450° for 8 minutes. Remove foil; bake 5 minutes longer. Cool on a wire rack. Reduce heat to 400°., For filling, in a small heavy saucepan, combine the butter, brown sugar and corn syrup. Bring to a boil over medium heat, stirring constantly. Remove from the heat; stir in nuts and vanilla. Spread into crust. , Place tart pan on a baking sheet. Bake until bubbly, for 15-20 minutes. Cool on a wire rack.

Steps:

  • Preheat oven to 350 degrees. Place twelve 4-inch tart pans with removeable bottoms on a baking sheet. Set aside.
  • On a lightly floured work surface, roll out dough to a 1/8-inch thickness. Cut out twelve 6-inch circles of dough with a sharp paring knife, using an overturned 6-inch bowl as a guide, if necessary. Press dough into tart pans; trim excess. Dock tart shells by piercing the bottom all over with a fork. Chill in refrigerator until ready to fill; set aside.
  • Spread pumpkin seeds on a rimmed baking sheet; toast, shaking pan halfway through, until lightly browned, 8 to 10 minutes. Spread nuts in separate rows on another rimmed baking sheet; toast, shaking pan until halfway through, until lightly browned, 15 to 20 minutes. Let seeds and nuts stand until cool.
  • Rough chop macadamia nuts. Combine nuts in a medium bowl; set aside. In a different medium bowl, combine heavy cream and salt; set aside.
  • Melt butter in a small saucepan set over medium-high heat. Using a sharp paring knife, split vanilla bean lengthwise. Scrape out pulp and seeds; add scrapings and pod to melted butter. Swirl pan so butter does not burn; butter will bubble as it brown. Continue cooking until bubbles subside and butter is dark brown and fragrant, 3 to 5 minutes. Remove vanilla bean; pour butter over cream mixture, whisking to combine.
  • In a medium saucepan set over medium-high heat, combine water, sugar, and corn syrup; bring to a boil without stirring. Use a pastry brush dipped in water to wash down the sides of the pan, dissolving any sugar granules. Allow caramel to cook, swirling pan to ensure even coloring, until it reaches 268 degrees on a candy thermometer, 10 to 15 minutes. Remove from heat, and immediately stir in seeds, nuts, and cream mixture; mixture may spatter. Return pan to heat; simmer on medium-low, stirring occasionally, until mixture registers 210 degrees and is a pale caramel color, 3 to 5 minutes. Remove from heat; pour into a heatproof bowl and cool until barely warm, 15 to 20 minutes.
  • Fill each tart shell with caramel mixture. Place tarts on a rimmed baking sheet, spaced 1/2-inch apart. Bake, rotating sheets halfway through, until crust is nicely browned, about 25 minutes.

3/4 cup (3 ounces) hulled pumpkin seeds
3/4 cup whole unblanched almonds (3 ounces)
3/4 cup whole unsalted macadamia nuts (3 ounces)
3/4 cup blanched hazelnuts (3 ounces)
1 cup plus 2 tablespoons heavy cream
1/4 teaspoon coarse salt
3/4 cup (1 1/2 sticks) unsalted butter
1 vanilla bean
1 cup plus 2 tablespoons water
1 1/2 cups granulated sugar
3 tablespoons light corn syrup

WALNUT/PECAN TARTS

Can be made into mini tarts or one big tart. The dough also makes a good croissant.

Walnut/Pecan Tarts image

Steps:

  • 1. Cream together the butter and the cream cheese.
  • 2. Gradually add flour and mix until combined thoroughly. Set aside. (Can be done with hands or with a mixer.) (Dough can be refrigerated if desired)
  • 3. Beat eggs and brown sugar together.
  • 4. Add vanilla and chopped nut of your choice.
  • 5. Separate the dough into small pieces and press onto tart pan to create a small cup. A non stick pan is preferable. You can improvise also by using a cupcake tray, if you don't have any tart pans.
  • 6. Spoon nut mixture into each tart. Do not over fill and remember to stir the nut mixture every time you spoon because the nuts have a tendency to float to the top. You want each tart to have a fair amount of nuts.
  • 7. Bake for roughly 30 minutes or until the edges are golden brown. There will also be "cracks" in the tarts as well to indicate if they have cooked or not. The oven must be at 350 degrees. *must be hot.
  • 8. Once cooled, remove from the pans and sprinkle with powdered sugar as a garnish.

FOR TART:
6 oz cream cheese
2 stick butter
2 c flour
FOR FILLING:
3 eggs
1 1/2 c brown sugar
1 c chopped nuts (walnuts or pecans)
1 tsp vanilla extract

HONEY AND PINE NUT TART

Two types of honey lend this luscious tart its elusive taste: Intensely floral leatherwood honey, which could easily overwhelm the buttery shortbread-like crust and mild pine nuts, is tempered by mellow acacia honey.

Honey and Pine Nut Tart image

Steps:

  • Make the pasta frolla: Whisk cream, egg, yolk, and vanilla in a medium bowl. Pulse flour, sugar, salt, and baking powder in a food processor to mix. Add butter, and pulse until mixture resembles coarse meal. With the machine running, add cream mixture, and process until dough just comes together. Shape dough into 2 disks, and wrap each in plastic. Refrigerate 1 disk until firm, about 1 hour; reserve remaining disk for another use. (Dough can be refrigerated for up to 2 days or frozen for up to 3 months; thaw before using.)
  • Preheat oven to 325 degrees. On a lightly floured surface with a lightly floured rolling pin, roll dough to 1/8-inch thickness. (If dough is soft and sticky, transfer to a baking sheet and freeze until firm but pliable, about 5 minutes.) Cut out a 12-inch round, and fit it into a fluted 10-inch tart pan with a removable bottom. (Patch any tears with scraps of dough.) Freeze while making the filling (or cover and freeze for up to 3 days).
  • Make the filling: Bring sugar, honeys, and salt to a boil in a medium saucepan, whisking until sugar dissolves. Add butter, and whisk until incorporated. Transfer honey mixture to a medium bowl, and let cool for 30 minutes. Whisk in cream, egg, and yolk until incorporated.
  • Place tart pan on a rimmed baking sheet. Scatter pine nuts over bottom. Slowly pour filling over pine nuts, redistributing pine nuts evenly with your fingers. Bake until crust is golden brown and center is set but still slightly wobbly, about 1 hour. Transfer tart to a wire rack, and let cool completely. Remove from pan, and serve immediately.
