GARLIC CHEESE CHICKEN ROLLUPS
This is a quick, easy and tasty meal - my husband's favorite! If you can make ahead and let marinate, it is even better. Roll on up to the stove and make a tasty treat for dinner tonight!

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Pound chicken breasts until thinned out. In a shallow dish or bowl mix together bread crumbs and cheese. Dip one side of each breast into melted butter or margarine, then into crumb/cheese mixture. Place a dollop of cheese spread at one end of each chicken breast, on the side of the breast not dipped in the mixture. Roll up each breast and secure with toothpicks.
- Place rollups in a lightly greased 9x13 inch baking dish and drizzle any remaining butter or margarine over all. Bake in the preheated oven for 35 to 40 minutes, or until cooked through and juices run clear.

- In a small bowl, combine the chicken, egg, pineapple, mayonnaise, salt and pepper. Cover and refrigerate for at least 1 hour. , Just before serving, stir in pecans. Place spinach on 4 slices of bread; top with chicken salad and remaining bread. Cut each sandwich into quarters.

CHEESY CHICKEN ROLL-UPS
These cheesy chicken roll-ups are going to become a favorite addition to your weekly menu. The chicken has a super crunchy (and tasty) outer coating. When you cut into it, yummy cheese oozes out. The gravy with sauteed mushrooms is a foolproof addition that completes this wonderful meal.

- 1. Combine Ritz cracker crumbs, flour, paprika, celery salt and dill weed in a zipper type bag and set aside. Put the additional 1/3 cup of flour in a bowl and set aside. In a small bowl beat the egg and half and half together until well blended. Set aside.
- 2. Sprinkle the chicken with salt and pepper on both sides and then pound thin, about 1/4" will be great.
- 3. Take 1 piece of the cheddar and 1 piece of the mozzarella cheese and lay it in the center of the chicken breast. Roll the chicken around the cheese and secure with toothpicks. Repeat for the 2nd piece of chicken.
- 4. Roll each piece of chicken in flour, then roll in the egg mixture and then drop into the zipper type bag with the cracker mixture. Coat really well. Repeat for the 2nd piece of chicken. Set them on a plate in the fridge until you are ready to cook them.
- 5. Preheat oven to 375. Heat oil and butter in a small skillet over medium heat. When your oil is about 325 carefully place the chicken in the hot pan. Cook until golden brown. Turn and cook the other side to golden brown. Remove from skillet and place on a rack over a baking dish. Bake in the oven for 20 - 25 minutes until the chicken is done. Remove from oven and let it sit for 5 minutes before serving.
- 6. Once you have removed the chicken from the skillet discard all but about a tablespoon or two of the cooking oil. Add the flour and stir constantly until it turns nutty brown being careful not to burn it. Add your chicken stock all at once and stir until it thickens slightly. Remove from heat. Just before serving add sour cream and stir well. Place your chicken on the plate, drizzle with the sauce and garnish with mushroom and green onions if desired.
- 7. Serving Suggestion: We like this on top of rice or pasta. We also really like adding some sauteed mushrooms on top.
SPRING CHICKEN ROLL-UPS WITH LEMON DIJON PAN SAUCE
These bundles are a healthy twist to a Cordon Bleu chicken - ham and cheese stuffed breast meat breaded and sauteed.

- Halve the chicken breasts horizontally separating each into 2 cutlets.
- Place each halved cutlet in an individual freezer plastic storage bag (with slider tab). Add a tablespoon of water to each bag and pound into1/8-inch thick cutlets.
- Arrange the 4 cutlets on work surface. Season cutlets with salt and pepper on the side facing up. Cover each piece of chicken with 1 slice cheese and 1 slice ham. Starting on 1 side of the breast, place a small bundle of 3 asparagus spears. Wrap and roll the chicken around the asparagus. Wash hands.
- Heat about 1 tablespoon extra-virgin olive oil, a turn of the pan, in a nonstick skillet over medium heat. When hot, using tongs, add the chicken roll-ups to skillet with seam side down. Season the roll-ups with salt and pepper. Cover the pan loosely with tin foil and cook 4 to 5 minutes, turn roll-ups over and cook and other 4 to 5 minutes. Remove cooked roll ups to a serving plate. Add 2 tablespoons of butter and 2 tablespoons flour Stir in the chicken stock and Dijon mustard, scraping up any drippings from the bottom of the pan, and simmer 1 minute. Remove from the heat, add the lemon zest, lemon juice and parsley and spoon over chicken.

- In a plastic bag, mix the flour, seasoned salt and some salt and pepper. In a bowl, mix the eggs with 2 tablespoons water. In a separate bowl, add the breadcrumbs.
- Shake the chicken pieces in the bag to coat. In batches, dip them in the egg wash, then in the breadcrumbs.
- Heat about 2 inches of vegetable oil in a large skillet over medium-high heat until a few breadcrumbs dropped in the oil start to sizzle immediately. Fry the chicken, in batches if needed, until golden brown and cooked through, a couple minutes per side. Drain on a paper towel and serve with ketchup.

Steps:
- In a nonstick frypan over medium heat, briefly saute apple, celery and green onion with poultry seasoning in 1 tablespoon of margarine.
- In a bowl combine bread cubes, figs, pinenuts and egg white with sauteed mixture.
- Place each chicken breast, skin side down, between 2 pieces (16 inch long) plastic wrap.
- Pound to 1/4 inch thick with rolling pin (flatten to about 9x7 inches),remove from wrap.
- Form about 3/4 cup filling into 6 inch long mound along 9 inch side of chicken piece.
- Tuck in ends and roll up tightly.
- Secure with toothpicks and/or string.
- Arrange, seam side down, on rack in aluminum foil lined baking pan.
- Combine remaining margarine and honey, brush half over chicken rolls.
- Bake at 375 degrees for 40 to 45 minutes, until chicken is tender and golden brown, brushing once with remaining margarine-honey mixture.
- Cool 5 minutes.
- Remove toothpicks and string and cut crosswise into slices.

- Flatten each chicken breast half to 1/4-in. thickness; top with ham and cheese. - Preheat oven to 400 F. Grease an 8x11 baking dish with 1 tbsp of olive oil and set aside. Add egg whites to a large bowl and breadcrumbs to another large bowl and set aside.
- In a large mixing bowl, mix together ricotta, 1/2 cup mozzarella cheese, mushrooms, sundried tomatoes, spinach and 1/2 tsp salt and pepper.
