OATMEAL DATE COOKIES

These cookies are easy to make and one of my favorites.

Oatmeal Date Cookies image

Steps:

  • Preheat oven to 375 degrees F and grease cookie sheets.
  • In separate bowl, sift together flour, baking powder, baking soda and salt. Set aside.
  • In a large bowl, cream together shortening and both sugars until light and fluffy, using electric mixer at medium speed.
  • Add eggs, one at a time, beating well after each. Blend in vanilla.
  • Gradually add dry ingredients to creamed mixture, mixing well with spoon.
  • Stir in oats, dates and walnuts.
  • Drop dough by teaspoonfuls, about 2 inches apart, on cookie sheet.
  • Bake for 8 minutes or until lightly browned. Remove from cookie sheets to cool on racks.

Steps:

  • Preheat oven to 350°. Cream together shortening and brown sugar until light and fluffy, 5-7 minutes. Beat in eggs and vanilla. In another bowl, whisk the next 5 ingredients; gradually beat into creamed mixture. Stir in oats. , Drop by rounded teaspoonfuls 2 in. apart onto lightly greased baking sheets. Bake until golden brown, 10-12 minutes. Remove to wire racks to cool., For filling, cream shortening, confectioners' sugar and marshmallow creme. Add enough milk to achieve spreading consistency. Spread filling on the bottoms of half of the cookies; cover with remaining cookies.

Steps:

  • In a large bowl, cream butter and brown sugar until light and fluffy, 5-7 minutes. Add eggs, 1 at a time, beating well after each addition. Beat in vanilla. Combine the flour, baking powder and baking soda; gradually add to creamed mixture and mix well. Refrigerate for 1 hour or until easy to handle., On a lightly floured surface, roll out dough to 1/8-in. thickness. Cut with a floured 2-1/2-in. cookie cutter. Place 1 in. apart on greased baking sheets. Bake at 350° for 10-12 minutes or until edges are lightly browned. Remove to wire racks to cool completely., In a small saucepan, combine filling ingredients. Cook over medium heat for 3 minutes or until thickened and bubbly. Cool to room temperature. Spread on the bottoms of half of the cookies; top with remaining cookies.

Steps:

  • Cream butter and sugar together well.
  • Slowly mix in milk.
  • Add remaining ingredients.
  • Mix well.
  • Chill for 1 hour.
  • Roll out fairly thin on lightly floured board.
  • Cut into 2 1/2-inch rounds.
  • Place on ungreased baking sheets.
  • Bake in 350°F oven for 8-10 minutes.
  • Cool.
  • Fill with Date Filling, to form a sandwich.
  • For date filling: combine dates, sugar and water in saucepan.
  • Bring to a boil.
  • Simmer, stirring often, until mushy and thickened.
  • Add more water if too dry, or simmer longer if too runny.
  • Cool and spread between cookies.

Steps:

  • Oatmeal Cookies Combine and sift: flour, baking soda and baking powder. Cream shortening and sugar. Alternately add buttermilk and dry ingredients to sugar mixture. Mix well. Add oats and combine. Chill thoroughly. Roll out thin and cut into rounds. Bake about 10 minutes at 350; grease pan first time only. Cool overnight. Date Filling Boil all ingredients until very thick. Cool before using. Make Cookies Spread filling on cooled cookie and cover with second cookie. Put in airtight container and age for at least two weeks (three is better). Enjoy.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a small saucepan over low heat, mix dates, sugar and 1/2 cup of water. Bring to a boil, and cook for 15 minutes, or until thick and smooth. Set aside to cool.
  • Cream butter and brown sugar together until smooth. Gradually mix in flour, baking soda, and salt. Add the oatmeal and mix well. Stir in 2 to 4 tablespoons of water. Form the dough into a ball and refrigerate for 15 minutes.
  • On a floured surface, roll dough to 1/8 inch thickness and cut into 2 inch rounds. Place 1/2 of the rounds on cookie sheets. Spoon date mixture in the center of each round and top with another round. Press edges firmly together.
  • Bake 15 minutes in the preheated oven, or until browned.

This recipe is from my grandmother who left Russia as a girl to come to Canada. It's the only recipe I have of hers. The original recipe calls for a filling of dates, sugar and water to be boiled with no amounts given. Jam works very well too.

Steps:

  • Mix the sour cream with the baking soda.
  • There are no directions as how to mix the dough but I always do this.
  • Mix the margarine well with the flour, salt and oatmeal. Add the sour cream mixture and vanilla.
  • The dough will be wet. Refrigerate for 2 hours.
  • Preheat oven to 350 degrees.
  • Roll the dough on a floured surface thinly, about 1/3 inch or a bit less. Cut into 2 1/2 to 3 inch rounds and place on cookie sheet.
  • Bake for 4-5 minutes, more or less, not letting the cookies brown too much. I have a fast cooking oven, you may need to allow 8 minutes.
  • Let cool on the pan a few minutes, then remove cookies from the sheet onto a rack.
  • When totally cooled, make sandwiches with a date filling, or jam.
  • I don't know the serving amounts, so guessing.
