ORANGE BUTTER COOKIES

The most common mistakes made by home bakers, professionals say, have to do with the care and handling of one ingredient: butter. Creaming butter correctly, keeping butter doughs cold, and starting with fresh, good-tasting butter are vital details that professionals take for granted, and home bakers often miss.

Steps:

  • Position two oven racks in top and bottom third of oven. Preheat oven to 350 degrees. Line two cookie sheets with parchment paper.
  • In a bowl, whisk flours, baking soda and salt together. In a mixer, cream together the sugar, butter and orange zest at medium speed until light and smooth, about 3 minutes. Scrape down the sides of bowl frequently. Add egg and mix. Add one egg yolk and mix. Add remaining egg yolk and mix. Stir in dry ingredients just until combined.
  • Scoop tablespoons of dough onto parchment, leaving more than 1 inch between cookies. Press each one down lightly with 2 fingers to flatten to a thickness of 1/2 inch. Leave any ridges and valleys on top of cookie intact, but smooth the edges.
  • Bake about 15 minutes, rotating cookie sheets halfway through. Cookies should be pale but baked all the way through. Cool on sheets 5 minutes, then transfer to a rack and cool before storing in airtight containers up to 1 week.
  • When ready to serve, make icing: Bring a small pot of water to a boil. Peel orange, being careful to remove only outer orange zest, and cut into thin strips. Blanch in boiling water 1 minute; drain. Sift confectioners' sugar into a bowl. Whisk in 2 tablespoons milk. Whisk in more milk if needed to make mixture thin enough to spread. Add extract, salt and zest, and whisk to combine.
  • Place cookies on a rack and drizzle icing over each one (make sure there is some orange zest in each spoonful). Icing will settle into cookie crevices; let harden.

TAHINI THUMBPRINTS COOKIES WITH DULCE DE LECHE

Pleasantly bitter tahini and rich, sweet dulce de leche make a perfect pair in these charming little cookies. The tahini gives the baked dough a fudgy, halvahlike texture and flavor, and a chewiness that's totally irresistible. Top the dulce de leche centers with a sprinkle of flaky salt for sweet-salty perfection in each bite. These cookies are also excellent filled with a dollop of raspberry jam in place of the dulce de leche.

Tahini Thumbprints Cookies With Dulce de Leche image

Steps:

  • Place racks in the upper and lower thirds of an oven and heat the oven to 350 degrees. Line 2 sheet pans with parchment paper.
  • In a small bowl, whisk together the flour, baking powder and baking soda, and set aside.
  • In the bowl of a stand mixer fitted with the paddle attachment, or with a hand mixer, cream together the sugar and butter on medium-high speed until light and fluffy, 2 to 3 minutes. Add the tahini and mix on medium speed until well combined, stopping to scrape down the sides and bottom of the bowl as needed with a rubber spatula.
  • Add the egg, egg yolk, vanilla extract and salt to the butter-tahini mixture, and mix on medium speed until emulsified, about 1 minute. Scrape down the sides and bottom of the bowl to ensure the dough is evenly mixed.
  • Add the flour mixture, and mix on low speed until just combined and no streaks of flour remain. Scrape the sides and bottom of the bowl to ensure the dough is evenly mixed.
  • Roll the cookies into tablespoon-size balls and place them on the baking sheets about 2 inches apart.
  • Bake the cookies for 7 minutes, then remove them from the oven and very carefully use your thumb or the handle of a wooden spoon to make a teaspoon-size indent in the center of each cookie. The cookies will crack slightly along the edges; that's OK. Return the cookies to the oven, rotating the pans from front to back and top to bottom. Bake until the cookies are set and just barely golden at the edges, another 5 to 7 minutes. Set the pans on cooling racks and press on the indentations slightly if they have puffed up during the baking process. Let the cookies cool for 10 minutes.
  • Use a small spoon or pastry bag to fill the indentation of each cookie with about 1 teaspoon of dulce de leche, and sprinkle with flaky salt, if using. Let cool completely on the pans. Store in a single layer in an airtight container for up to 5 days.

1 1/3 cups/170 grams all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1/2 packed cup plus 2 tablespoons/130 grams light brown sugar
6 tablespoons/85 grams unsalted butter, softened
3/4 cup/200 grams tahini, stirred well
1 large egg plus 1 large egg yolk, at room temperature
2 teaspoons pure vanilla extract
1/2 teaspoon fine sea salt
Heaping ½ cup/180 grams dulce de leche, store-bought or homemade
Flaky salt

Oblea image

Steps:

  • Place the flour in a bowl and slowly add the water while stirring until it becomes a very liquid mixture (similar to pancake mix).
  • In a machine to make obleas (similar to a waffle maker except that it is flat) pour in the center of the hot plate one tablespoon of the mixture, then flatten it with the other hot plate.
  • Let it toast a bit, then remove the circle from the plate.
  • Do the same for the next circle, and so on until the mixture is finished.
  • You need two circles to make one oblea.
  • Arequipe (Ariquipe):
  • Combine the milk and the sugar in a large saucepan and let it simmer while constantly stirring with a wooden or heavy plastic spoon, (do not use metal as it will crystallize the milk) until you see the milk changing colour to a nice light brown. Its consistency should be thicker at that time. It needs to be stirred for about 3 to 5 hours. You have to be very patient because the stirring has to be constant so it won't stick to the pot.
  • Then let it cool down before tasting or spreading it on the oblea.
  • Making the oblea:
  • Place one circle on a plate and spread as much arequipe as you want over it. Place another circle on top. The oblea is now ready to be eaten.
  • The arequipe can also be served alone as a dessert. This is truly a delicious Colombian dessert.
  • In a hurry?
  • There is a faster way to make Obleas con arequipe.
  • For the dough, at the supermarket buy ready-made pieces of hosts. One can of condensed milk is required for the arequipe.
  • Place the unopened can of condensed milk at the bottom of large saucepan filled with water over the top of the can.
  • Let it boil rapidly, and then turn the heat down, so that it boils for about 2½ hours.
  • Make sure that the can is always covered with plenty of water.
  • After it has finished boiling, place the pot under running cold water. When the can is cold, open it and you will see that the milk has become thick and brown.
  • Follow the steps above: "Making the oblea.".

  • Cream together the sugar and butter in a food processor/stand mixer or with a hand mixer. Add the egg yolk and vanilla and blend in. Add the flour and cornstarch, mix and bring together into a ball. Wrap in cling wrap/film and chill for 30 minutes.
  • Once the dough has cooled, roll out the dough relatively thinly (approx 1/4in/2-3mm) and cut small circles and place on a lined cookie sheet/baking sheet/tray. Repeat with the rest of the dough. Bake the cookies for approx 1-12 minutes until they are just starting to brown very slightly. They should still be very pale. Leave to cool a minute before transferring to a cooling rack.
  • When the cookies are cool, put a small spoonful of dulce de leche on one cookie and press another on top. Make sure you press them together holding the middle of the cookie so the cookies don't break. If needed, twist them slightly to spread out the dulce de leche. While I didn't here, you can roll the outside in coconut if you like, or lightly dust with confectioner's/icing sugar.

  • Put the milk, sugar, corn syrup, baking soda, and salt in a heavy-duty 8 quart (8 liters) saucepan or Dutch oven. Place over medium-high heat and bring just to a boil.
  • Watch carefully, and as soon as the milk begins to foam up, stir with a heatproof spatula or wooden spoon, reduce heat until the milk is just at a low rolling boil.
  • Continue to cook the mil, stirring the bottom and sides of the saucepan frequently, until the mixture becomes very thick and sticky and caramel colored (this will take about 40-60 minutes.) It is important to frequently stir the milk so it does NOT burn.
  • In a separate bowl, whisk the flour with the salt. In the bowl of your electric mixer (or with a hand mixer,) beat the butter until smooth and creamy. Add the sugar and beat until smooth. Beat in the vanilla extract. Gently beat in the flour mixture just until incorporated. Flatten the dough into a disk shape, wrap in plastic wrap, and chill the dough for at least an hour or until firm.
